🫐 Healthy Blueberry Muffins with a Light Crumble 🫐
I’ve been trying to find healthier ways to enjoy some of my favorite comfort foods without giving up flavor… and these turned out SO good! 😍

✨ Milk Options:
🥛 1% milk
🥛 Almond milk
🥛 Oat milk
🥛 Fairlife milk for extra protein
✨ Protein Options:
💙 Unflavored collagen peptides
💙 Vanilla protein powder
💙 Plant-based vanilla protein powder
🫐 Healthy Blueberry Muffins Recipe 🫐
Dry Ingredients:
• 1 cup oat flour
• 1 cup almond flour
• 1–2 scoops collagen peptides OR protein powder
• 1 tsp baking powder
• ½ tsp baking soda
• 1 tsp cinnamon
• Pinch of salt
Wet Ingredients:
• 2 eggs
• ½ cup unsweetened applesauce
• ½ cup Greek yogurt
• ¼ cup maple syrup or honey
• 1 tsp vanilla
• 2–4 tbsp milk of choice
Add-ins:
• 1–1½ cups blueberries
• 1–2 tsp lemon zest 🍋
✨ Crumble Topping:
• ¼ cup oat flour or oats
• 2 tbsp almond flour
• 1 tbsp coconut sugar or brown sugar
• ½ tsp cinnamon
• 1 tbsp cold butter or coconut oil
Bake at 350° for 18–22 minutes 🧁
Honestly… these taste amazing with coffee ☕💙
