EASY SPANISH EGG & TORTILLA SCRAMBLE. AKA MIGAS. Ya’ll know I have been having a love affair with eggs for a long time. Ay papi!!
One of you told me to throw some tortillas in my eggs & it changed my life forever!
This recipe is a great way to use up stale tortillas or chips, left meat, or veggies that are nearing the end.
This MIGAS inspired egg & tortilla scramble is so filling and is a dish the whole family will love. It’s CHEAP, quick, easy, warm, & flavorful. It taste like BREAKFAST BURRITO in a bowl!
INGREDIENTS:
-SPRAY OIL
-3 CORN TORTILLAS (or tortilla chips)
-12 EGGS
-1 PACKET TACO SEASONING
-1 CAN BLACK BEANS (rinsed & drained)
-S & P TO TASTE
DIRECTIONS:
Spray oil in pan. Tear the corn tortillas into pieces, toss in pan, & stir them around until lightly crispy. Push tortillas to the edge of pan. On the empty side of the pan add eggs & taco seasoning. Scramble eggs until 75% cooked then add black beans & mix the whole pan together. DONE
TOPPING IDEAS:
-shredded cheese, jalapeños, hot sauce, salsa, greek yogurt, cilantro, green onions…ect.
-MAKES 4 LARGE SERVINGS
Serve with your favorite toppings, or roll it up in a warm tortilla.
