Here’s a delicious dish that is a staple on Italian menus everywhere, very healthy, and is always a big hit whether cooking for friends or just family. If people just said it tastes good they could just be blowing smoke up my, well you know what. But, they actually ask for the recipe after trying it, which I believe means that they truly savor my flavors, or they’re just trying to flatter me 😊. Anyhow, here are the details: You’ll need 2 lbs chicken thighs, 1/2 onion, 8 oz mushrooms, 1 bell pepper, salt, garlic, and onion powder, Italian seasoning and 1.5-2 jars of organic marinara. Parmesan or other cheese can be added on top for extra flavor too.
Take organic chicken thighs, sprinkle with seasoning then bake at 375 for 25-30 minutes till they’re almost done (slightly pink in middle) and at the same time chop up onions, mushrooms, bell peppers to get ready.
Pour the juice from the thighs from the dish and add in the mushrooms, then bell peppers and cover with your marinara sauce. Spread the onions throughout and press them into the marinara as well before sprinkling more garlic, onion, and Italian seasoning. You can now add some mozzarella or Parmesan on top if you want some warm, gooey dairy deliciousness to top it off.
Put it back in the oven for another 20-30 minutes for all the veggies to cook and chicken to finish as well. Once the time’s up let it cool about 10 minutes or so and then chow down 😋!
