I have some exciting changes to share!

Earlier this year, my best friend and I made the decision to bring together our two standalone businesses to create something more comprehensive.

Together, we created Jaelion.

Jaelion was created to build upon the work we were each doing individually, while allowing us to serve on a much larger scale. We are now working alongside healthcare providers, wellness practices, & other businesses to help extend the services they are able to offer to their patients and clients.

I waited to share this because I wanted to finish serving the clients that I was working with before ending this chapter.

I am so incredibly grateful to everyone who trusted me to be part of your wellness journey and supported Elevate Restorative Wellness along the way. Your trust in me has never been taken lightly and I am forever grateful to have had the opportunity to serve you.

As I continue to grow and evolve with Functional Medicine, I’ve also decided to make more room for another part of my life that I love as well.

So I realized that I never posted the cookies that I baked a week ago, so I do apologize for that. I had a friend reach out and place a new order with me so here are the same cookies that I made last week.

If I’m busting Ruth out (yes, I name my appliances and my cars), that only means one thing- it’s cookie making time!!!!

I’m making thank you cookies for friends coming over to help Daniel and I with some household repairs.

Nothing says thank you quite like homemade cookies. I’ll post pictures later!

So I forgot to post this yesterday-

Overall it wasn’t bad, but it wasn’t great either. I figured out where I went wrong and will be correcting my mistakes. I will make this again this week so stay tuned!! The number one thing that I’ll be fixing is scoring my bread. I forgot to do that and that’s a huge part of what went wrong with this.

I’m excited to make this again because once I fix the things I need to, this gluten free bread is going to be 🔥

I am trying my hand again at gluten free bread! I made a loaf a week ago and it was too ye**ty for my liking so I’m going to try making this again and just use the yeast amount in the starter recipe. I’ll continue to post progress pictures as I make the bread!!

Day 29: Another late night unfortunately. I was able to get away for a woman’s retreat this weekend so I’m catching up with my work. However, eating has been solid, energy is solid and I’m feeling good!

I’m giving myself 45 minutes and then calling it for the night. I need wind down time as well. I need to practice what I preach & I am doing just that.

Dinner tonight!!

Lemon chicken, rice, & grilled asparagus!

This was the recipe I made the other night.

Today has gone well!!! I am so thankful that I’m feeling better and my energy continues to increase every day! Now time to get ready for the women’s retreat this weekend - which I have already secured a gluten free and dairy free menu plan for myself-. I am looking forward to being with godly women, coming together and worshipping our King and filling up my cup.

Exercise is not just about esthetics. It’s about functionality & being a good steward over what God has given you. Psalm 91 says that “with long life I will satisfy him and show him My salvation.” He gave us joints for a reason. To move them. And I’m not talking about HIIT training or cross fit (which I do enjoy), but something as simple as walking or stretching (which is not a fan favorite of mine right now because I’m like the tin man from the Wizard of Oz 🤦🏼‍♀️) but easy movement for 20-30 minutes a day makes a huge difference!!

I am stunned that it is already Day 23 of this challenge.

Outside of a dairy debacle and dealing with a bit of a stomach bug, I have been feeling great! I love how I can get through my day and not feel like I need to take a nap! I do need to do better with my walking every day but I have taken my supplements, my eating is good and I have been drinking my water.

Tonight’s dinner (not pictured because I forgot my phone upstairs) was lemon rice and lemon chicken with thyme, Italian seasoning, lemon juice, onions, garlic, & white w**e reduction. I seared the chicken thighs & then made the sauce. I sauteed the onions, added the garlic until I smelled it (30 seconds) & then added the white w**e. I reduced it until it was down by half, then added the herbs, salt and pepper, a bit of chicken stock, and added the chicken back in until it was cooked all the way through. I took out the chicken thighs to let them rest & thickened the sauce with a cornstarch slurry and then added some butter off the heat so it thickened up. I strained the sauce since my immersion blender called it quits and I added that over the chicken and rice. 10/10 recommend. When I make this again (probably tomorrow night with chicken breasts) I’ll take pictures to show.

Now it’s time for me to wind down and get some sleep 💤.
