Berry Chicken Salad Recipe:
2 Chicken Breasts, grilled and cut into small chunks
1/2 cup Blackberries
1/3 chopped celery
1/3 cup crumbled goat cheese
1/3 cup chopped pecans
4 cups baby mixed greens (arugula, spinach, kale)
Avocado oil (for cooking chicken)
Kosher salt and pepper
Directions:
Coat chicken breasts in avocado oil and season with salt and pepper, heat a grill pan or a cast iron pan until hot.
Cook chicken on both sides until cooked through (6-7 minutes per side). Remove from the pan and let rest. Once chicken is cool enough to handle, cut into small cubes, set aside.
In a large bowl, place your salad greens, top with remaining ingredients.
Lightly toss with dressing, taste and adjust dressing and seasoning.
