Ergothioneine is an amino acid that can be incorporated in your diet via supplementation, or through natural food sources. The most common source? Delicious, delicate, umami-rich mushrooms.

A new study identified a link between low blood levels of ergothioneine and an increased risk and progression of age-related disorders, from Alzheimer’s disease to Parkinson’s. Summer entertaining just got a lot more impressive — and a lot less complicated.

These chimichurri chicken kebabs are the kind of recipe that looks like you tried really hard but actually just required a blender and a few hours of marinating. The chimichurri is the real star — bright, herbaceous, punchy, and honestly good on everything.

Make it for Memorial Day, a Tuesday, or any excuse to fire up the grill.



Chicken Kebabs
4–5 boneless skinless chicken breasts, cubed (2 lbs)
2 lemons, juiced
¼ cup olive oil
1 tsp dried thyme
1 tsp dried oregano
4 cloves garlic, minced
½ tsp sea salt
Freshly ground black pepper
2 zucchini, sliced into 1-inch rounds
1 yellow onion, peeled and quartered
1 red bell pepper, quartered
1 orange bell pepper, quartered

Chimichurri Sauce
1½ cups chopped cilantro
½ cup chopped parsley
¼ cup chopped mint
3 tbsp chopped fresh oregano
4 garlic cloves
⅓ cup red wine vinegar
¾ cup olive oil
½ tsp ground cumin
¼ tsp red pepper flakes
½ tsp sea salt

To make it:
Chop or pulse chimichurri herbs + garlic, mix with vinegar, whisk in olive oil, season to taste
Marinate chicken in lemon, olive oil, garlic + herbs for at least 2 hours or overnight
Thread chicken + veg onto skewers, brush with extra marinade
Grill medium-high 15–20 mins, turning occasionally
Serve over quinoa, freekeh, or brown rice with chimichurri generously drizzled on top

Are you washing your produce before you eat it? If not, you should be — especially if we’re talking about conventionally grown produce. And not to complicate things, but there IS a right and wrong way to do it to minimize pesticide contamination.

You know the California Food Safety Act? Signed in 2023, it bans several harmful food additives from being used and sold in the state — including cancer-linked Red Dye 3.

States have always had the power to create their own food safety laws to protect their residents. But the FRESH Act could change all of that. If passed, federal law would override state protections — making laws like California's effectively pointless.

When examined, the FRESH Act is anything but fresh. In practice, it will make it easier for companies to sell us potentially toxic ingredients and block states from banning unsafe additives.

That’s compared to lake salt, which only had up to 462 microplastic particles per kilogram.

Of course, this was based on a 2018 study, so the numbers have likely only gone up since then. But in addition to learning lake salts are less contaminated than sea salt, the study also illuminated certain regions to avoid. Here are some things to consider:

🧂 Contrary to what you might think, refined salt is often less contaminated than unrefined
🧂 Sea salt from regions like Asia and the Mediterranean are more likely to be contaminated due to high pollution in those regions
🧂 Going back to cardboard packaging would be a step in the right direction (vs. more modern plastic options)

At the end of the day, salt is like any other consumer product. We can reduce our exposure by pushing for stronger accountability, being aware of things like source and production processes, and simply supporting efforts to reduce pollution worldwide.
