Fiesta Scramble

Ingredients:
1 cup egg beaters
3/4 cup mushrooms or tomatoes
1/4 cup sweet bell peppers
1/2 cup spaghetti squash, cooked
2.5 oz ground turkey, browned (seasoned w/ 1/8 tsp low sodium taco seasoning)
1/4 tsp garlic and herb (Mrs. Dash)
1/4 tsp salt, divided
1/2 tbsp hot sauce (Tapatío)
1 oz low fat cheese, shredded
1/2 tsp olive oil
1 oz avocado

Direction:
Sauté the mushrooms and bell peppers with olive oil. Add in cooked turkey, let warm. Last add the eggs and scramble. Top w/ cheese and hot sauces. Serve with hash browned spaghetti squash.

Avocado & Salmon Power Bowl 🥑🐟

Light. Satisfying. Fat-burning fuel. 💥

This refreshing bowl is packed with protein, healthy fats, and non-starchy veggies.

• 5 oz grilled or baked salmon
• 1 ½ oz avocado (about 3 tbsp diced)
• 1 cup mixed leafy greens
• 1/2 cup sliced cucumber
• 1/2 cup cherry tomatoes, halved
• 1 tsp extra virgin olive oil
• 1 tbsp lemon juice
• Salt, pepper, and fresh dill or parsley to taste (½ Condiment)



🥣 Directions

1. Cook the salmon if not already prepared—grill, bake, or air fry until flaky and tender.

2. In a bowl, combine greens, cucumbers, tomatoes, and diced avocado.

3. Add flaked salmon over the top.

4. In a small bowl, whisk olive oil, lemon juice, salt, and pepper, then drizzle over salad.

5. Sprinkle with fresh herbs if desired.

6. Toss gently and enjoy!

*Prep this by cooking salmon ahead of time and storing portioned salad ingredients separately. Add dressing and avocado right before serving!
