Maybe breakfast keeps you steady, but lunch leaves you exhausted. Maybe the same meal affects you differently after a stressful day or a poor night of sleep. Perhaps the food you expected to be the problem is not the problem at all.

A gluten-free label tells you what is not in the food.
It does not tell you how your body will respond to the meal.

A glucose spike could come from:
- the type of gluten-free crust
- the amount of starch in the serving
- low fiber in the crust
- not enough protein or fiber paired with it
- eating it after a long gap without food
- stress, poor sleep, or low movement that day
- the fat in pizza delaying the rise, making the spike show up later

That last point matters, so let's explain deeper: pizza can sometimes cause a delayed glucose response because the mix of carbs and fat can slow digestion, so the spike may not happen immediately.

From an RD perspective: your body is not a math problem where the same input always creates the same output.

Nutrition lives in many dimensions:
• Glucose trends (not just single readings)
• Sleep quality and duration
• Stress load
• Movement (type, timing, consistency)
• Meal timing and spacing

Example:
Same breakfast. Different week.
Week A: solid sleep + lower stress → a steady rise and gentle return to baseline.
Week B: poor sleep + higher stress → noticeably higher spike and a longer “hang time.”

Nothing “wrong” with the person. Nothing magical about the breakfast.
