Do you crave something warm for breakfast on a cold windy day? 💨🍎

This cozy bowl was exactly what I needed today. 🥣😋

I made steel cut oats and stirred in a tablespoon of cottage cheese for extra creaminess and protein, then topped it with caramelized apples cooked with cinnamon and maple syrup.

Simple, comforting, and so satisfying on a cold 🥶 morning 😊

Recipe:
• 1 serving cooked steel cut oats
• 1 tbsp cottage cheese
• 1 tbsp ground flax
• 2 tbsp maple syrup (divided)
• 1 apple, diced
• Cinnamon

Stir cottage cheese, flax, and 1 tbsp maple syrup into warm steel cut oats.

In a pan, cook diced apples with cinnamon and 1 tbsp maple syrup until soft and caramelized.

Spoon over oatmeal and enjoy!

Strawberry Shortcake Yogurt Bark🍓
This tastes like strawberry shortcake 🍰

I made this easy yogurt bark with strawberries and graham cracker crumbs and it came out SO good.

Simple, refreshing, and such an easy little summer treat 😁

Recipe:
• 2 cups vanilla Greek yogurt
• strawberries, chopped
• graham cracker crumbs

Spread yogurt into a parchment-lined 8x8 pan.
Top with chopped strawberries and graham cracker crumbs.

Freeze until firm, then break into bark pieces and enjoy (about 4 hours)

Mexican Zucchini Boats 🌮
Sooo good 😊

I made these Mexican zucchini boats with a little street corn twist and they were so flavorful and easy.😋

I used ground chicken, garlic, green onion, taco seasoning, black beans, and corn salsa, then finished them with Cotija, cilantro, a creamy lime yogurt drizzle, and Everything But the Elote seasoning.

Such a simple, satisfying meal that feels like comfort food but healthy at the same time 💗

Recipe:
• zucchini (scooped)
• ground chicken
• garlic + green onion
• taco seasoning
• black beans
• corn salsa

Cook chicken, add garlic, green onion, taco seasoning, beans, scooped zucchini and corn salsa.
Fill zucchini boats and bake at 375° until tender, about 20 minutes.

Top with:
• Cotija cheese
• cilantro
• Greek yogurt + lime (mixed for drizzle)
• Everything But the Elote seasoning
• fresh lime squeeze

Cottage Cheese Bagels 🥯

I kept seeing cottage cheese bagels everywhere and finally tried them and they were so easy and delicious 😋

I made a mix of sweet and savory:
✨ cinnamon + coconut sugar
✨ garlic + basil
✨ everything bagel seasoning

Such a simple, high protein option that you can easily make on your own. 😊

Recipe:
• 1 cup cottage cheese (blended smooth)
• 1 cup all purpose flour (texture best)
• 1 tsp baking powder
• pinch of salt

Mix everything into a dough, divide and shape into bagels.

Brush with egg wash (1 egg + splash of water) then add any toppings, and bake at 375° for 20–25 minutes until lightly golden.

Let cool slightly, slice, and enjoy 💗

These are my mini naan pizzas I experimented with and they came out SO good 🍕😊

This is my quickest way to make pizza at home, simple, high protein, and still so delicious 😋

I used ground turkey, spinach, and kept it really easy.

Such a great option when you want something that feels like comfort food but still supports your body ❤️💪

How I made them:
• Mini naan
• Ground turkey
• Spinach
• Garlic
• Sauce
• Mozzarella
• Salt, pepper, oregano

Cook turkey in olive oil, add garlic + spinach until wilted.
Top naan with sauce, turkey mixture, and mozzarella.
Bake at 375° until melted and slightly crispy. 🍕

Save this for a quick meal you’ll actually look forward to 🍕❤️

Today I gave stuffed peppers a twist and they came out SO good 🫑

I love taking something classic putting a twist on it!!😃

I used ground chicken, my own homegrown mushrooms 🍄, white beans, and simple ingredients I always have on hand.

This is such a great high protein, low carb, nourishing meal, especially in midlife when supporting muscle is so important.💪

Recipe:
• Bell peppers (cut 1/4 top off, seeds removed)
• Ground chicken
• Olive oil
• Garlic
• Green onions
• Mushrooms (I used homegrown 🍄)
• 1/2 Diced tomatoes
• White beans (rinsed + drained)
• Mozzarella
• Salt, pepper, oregano, basil

Pre-bake peppers at 375° for 10–15 minutes with tiny bit of olive oil it the middle! It’s softened them.

Cook chicken in olive oil with garlic and green onion. Add mushrooms, tomatoes, white beans, and seasoning.🍄‍🟫

Stuff peppers, top with mozzarella, and bake again for 15–20 minutes until melted and bubbly. Can broil for a few minutes! 😊

Save this for an easy, comforting meal that’s delicious anytime!😘🤗

If you’re craving pizza but still want to feel stay low carb and good after, this is one of my favorite ways to make it!! 😊

These portobello mushroom 🍄‍🟫 pizzas are so simple to make and filling! They’re a great low carb option that still gives you that comfort food feel 🍕

I also love that they’re high in protein, which is so important for supporting muscle, especially in midlife. 💪

Recipe:
• Portobello mushrooms (stems removed)
• Tomato sauce
• Chopped grilled chicken (I used leftovers) or ground turkey
• Shredded mozzarella
• Oregano
• Fresh basil

Bake the mushrooms first to release moisture, then top with sauce, chopped chicken, and cheese. 🧀 🍕

Bake again until the cheese is melted and bubbly, then finish with fresh basil. 🪴

Save this for when you’re craving pizza but want something lighter and delicious 😋❤️
