Herbal Pesto
My family loves pesto and although it’s traditionally made with basil one way I can sneak extra vitamins and minerals into pesto is by utilizing some of the nutritious w**ds that I am constantly controlling in my yard and garden.
Lambs quarter is an invasive w**d that grows everywhere. I see it in parking lots and along highways. The branching plant can grow up to 5 feet tall and has leaves that resemble a goosefoot. The leaves, flowers, and seeds, are all edible and are high in Vitamins A, C, K, and B6 and Minerals such as magnesium, iron, zinc, manganese, and potassium.

Purslane
Purslane is a common w**d. You’ve likely seen the plant growing in cracks of side walks and barren parking lots. This amazing and prolific plant is the highest plant source of omega-3 fatty acid. It is also rich in vitamin C, beta carotene, manganese, and potassium.
Recipe:
2-4 crushed cloves of garlic
1/2 cup Olive Oil
2-3 cups herbs / greens (basil, kale, lambs quarters, purslane, dandelion)
1/4 -1/2 cup Parmesan / pecorino cheese
Salt to taste
Lemon juice to taste
1/4 cup pine nuts
