Food for Thought was lucky enough to be able to host a night of Open Call. With help from the Open Call team, we put together an agenda of mindfulness-inducing food exercises. These ranged from tasting things on a deep, descriptive and emotional level to creating their own "unconventional" dishes from conventional ingredients to expand their eating experience.

Sadly, we all know how much food is wasted day to day in the United States, however this new project based in Colorado has come up with a solution to: decrease the amount of food that is going into landfills, harness the methane produced from anaerobic digestion, and reuse food waste in agricultural processes. Check it out!

At the Heartland Biogas Project, spoiled milk, old pet food and vats of grease combine with helpful bacteria in massive tanks to generate gas. It's all thanks to anaerobic digestion.

Guys, good news: We're going to start posting key nutritional facts for you every Thursday. To start out, here are some nourishing facts about America's beloved nut- the peanut!! It turns out this fan favorite makes a wonderful impact on your body, not just your heart.

Just a handful of peanuts per day provides enough recommended levels of phenolic anti-oxidants, minerals, vitamins, and protein!

- Peanuts are rich in mono-unsaturated fatty acids (MUFA), especially oleic acid. MUFA helps lower LDL or "bad cholesterol" and increaseS HDL or "good cholesterol” level in the blood, and prevent coronary artery disease and stroke risk!

-Peanut kernels are good source of dietary protein; compose fine quality amino acids that are essential for growth and development.

-Research studies have shown that peanuts contain high concentrations of poly-phenolic antioxidants, primarily p-coumaric acid. This compound has been thought to reduce the risk of stomach cancer!

-Peanuts are an excellent source of resveratrol, another polyphenolic antioxidant. Resveratrol has been found to have protective function against cancers, heart disease, degenerative nerve disease, Alzheimer's disease, and viral/fungal infections.

-The kernels are an excellent source of vitamin E (a-tocopherol); containing about 8 g per100 g. vitamin E is a powerful lipid soluble antioxidant which helps maintain the integrity of cell membrane of mucus membranes and skin by protecting from harmful oxygen free radicals :D take that, air pollution!

The nuts are packed with many important B-complex groups of vitamins such as riboflavin, niacin, thiamin, pantothenic acid, vitamin B-6, and folates. 100 g of peanuts provide about 85% of RDI of niacin, which contribute to brain health and blood flow to brain.

Finally, peanuts are rich source of minerals like copper, manganese, potassium, calcium, iron, magnesium, zinc, and selenium.

Tufts Food for Thought has its GIM this Thursday (February 4th) starting at 8:00 in Eaton 207! This is the first meeting of the semester and we are super excited to get back to work on our campus. If you are a casual member, a lover of food, or you just wanna come check us out, come on by!

Our Mission Statement: “Food for Thought is a Tufts club that serves as a platform for addressing contemporary food issues through a variety of lenses, including environmental, political, social, ethical, economic, and nutritional. A group called Ugly Mugs says that consuming all the food that is discarded because it is visually unappealing would eliminate one billion tons of carbon emissions a year.
