The three most frustrating words in nutrition science?

“Well, it depends.” 😂

But sometimes, those are the most scientifically honest words an expert can say.

One thing 18+ years in nutrition has taught me? The more you learn, the more you realize how much we still don’t know.🧐

I recently had the opportunity to learn from some of the pioneers in nutrition science at Mayo Clinic where I also had the honor of presenting.

And what impressed me most wasn’t just their decades of groundbreaking research.

It was their willingness to question their own conclusions, acknowledge how their thinking has evolved, and keep asking better questions.

Because what we thought we knew 20 years ago might look very different today.

And in a world full of nutrition absolutes, quick fixes, and overly confident claims, I think we could all use a little more scientific humility.

Changing your mind when the evidence changes isn’t a weakness. It’s a strength.

And I thought that was pretty beautiful. ❤️

Science evolves. Good experts evolve with it.

Now I’m curious… What’s one nutrition belief YOU have changed your mind about? 👇

(Earlier in my career I thought carbs would a make people with diabetes gain weight 🤦🏽‍♀️🫠, thank god I’ve evolved! 😂)

Exhausted? Absolutely. 😂
Grateful? More than ever.

September. 🤍
The month that challenged me the most-and somehow reminded me that opportunity and preparation really do meet.

💫A month of going home and coming full circle.
🎤Of standing on stages and sharing what I’ve spent years learning.
🤯Of sitting in rooms with brilliant minds at Mayo Clinic and being reminded how much there still is to learn.
✈️ Of sleepless nights and way-too-early morning flights.

Speaking. Listening. Growing. Stretching.

Gracias, septiembre. You were A LOT. 😂🤍

When your research notes get drenched 3 minutes before going on national TV… 🫠😂

Deep breath. I’ve been doing this for 18+ years.

The difference between posting nutrition advice online and speaking as a nutrition expert? The work you don’t see: reading the research, checking the facts, and making the science useful for real families. ❤️

Gracias Ilia Calderon. & Univision por la invitacion!

Forget Hollywood…THIS is my version of meeting a celebrity 😂

And yes…he also happens to be one of the scientists behind the discovery of GLP-1 and satiety. Dr. Arne Astrup. 😱

Safe to say my nutrition/science brain 🧠 was having a moment!😂

What a privilege to participate in this one-of-a-kind conference, 2026 Dietary Patterns for Cardiometabolic Health: Advancing Scientific Consensus on Dairy Foods from infancy to Adolescence, sponsored by National Dairy Council
