Front Rowe’s Salmon Fried Rice with Mushroom Soy Sauce 🍚🐟🍄

Ingredients
• 2 cups cooked rice (preferably day-old)
• 1 salmon fillet, cooked and flaked
• 1 small onion, diced
• ½ red bell pepper, diced
• ½ green bell pepper, diced
• ½ yellow bell pepper, diced
• 2 cloves minced garlic
• 2 scallions, chopped
• 1 tomato, diced
• Fresh thyme (a few sprigs)
• 1–2 tablespoons mushroom soy sauce
• Salt and black pepper (to taste)
• Optional: extra spice or hot pepper
• 1–2 tablespoons oil (olive or vegetable)

Instructions
1. Cook the salmon first
Season lightly with salt and pepper, pan cook, then flake it into chunks.
2. Heat oil in a large pan or wok
3. Sauté the aromatics
Add onions, garlic, and thyme. Cook until fragrant.
4. Add peppers and tomato
Stir in red, yellow, and green peppers and the diced tomato. Cook for a few minutes.
5. Add the rice
Mix the rice into the vegetables and stir well.
6. Season with mushroom soy sauce
Pour the mushroom soy sauce over the rice and stir so it coats evenly.
7. Add salmon
Fold the salmon in gently.
8. Finish with scallions
Sprinkle chopped scallions on top and cook another minute.

Serve hot.
