Radish and Watercress Salad
Ingredients
- 1 teaspoon Salt
- 1 teaspoon Garlic powder
- 1 teaspoon Dijon mustard
- 1 tablespoon red wine vinegar
- 2 tablespoons olive oil
- 2 teaspoons Lemon juice
- 1 bunch watercress
- 1 bunch Red radishes, thinly sliced

Preparation
Combine salt, garlic powder. Dijon mustard, vinegar, liquid shortening, and lemon juice in screw-top jar.

Shake to blend.

Place watercress and sliced radishes in a salad bowl.

Add dressing; toss to blend.

Honey Mustard Chicken With Cashews and Veggies
Ingredients
- 2 handfuls of cashews
- 1/2 cup chicken broth
- 2 tablespoons grainy Dijon mustard
- 2 garlic cloves, minced
- 1/4 cup honey
- 1 tablespoon olive oil
- 2 red bell peppers, cut into strips
- 2 boneless, skinless chicken breasts, sliced into strips
- 1 1/4 cups snow peas
- 1/2 cup sour cream

Preparation
In a large skillet, heat oil over medium-high.

Add chicken and garlic and cook until chicken is cooked through.

Add cashews, peppers and snow peas, and cook until tender.

Remove chicken and veggies, and place on serving dish.

Add chicken broth to pan, and whisk in sour cream, Dijon and honey to the juices in the skillet, and heat until warmed through.

Pour sauce over chicken mixture and toss to combine.

Pesto Chicken Zoodles
Ingredients
- 1 tsp Cajun seasoning
- 2 8oz chicken breasts seasoned, grilled, and sliced (batch cook chicken for the week to save time!)
- 3/4 cup fresh basil leaves
- 1 clove garlic, peeled
- 1 Tbsp garlic salt
- 1/2 cup olive oil (separated into 2 – 1/4 cups)
- 1 Tbsp grated parmesan cheese
- salt and pepper to taste
- 2 large zucchini, spiraled

Preparation
To get started, place 1/4 cup of olive oil into a medium saucepan and allow to heat on medium heat. Once warm, place zucchini in pan and then sprinkle with garlic salt and cajun seasoning. Toss with tongs to get all of the zucchini coated with oil and seasoning. Cover with a lid and steam for two to three minutes.

Remove lid, toss zucchini noodles again and then cover for another 2 minutes.

Remove from heat. In the meantime, place the basil, garlic, and grated parmesan cheese into a food processor. Slowly add the olive oil, and then set to the side.

Add zucchini noodles, pesto, and chicken to a medium dish and toss until everything is fully coated.

Serve immediately.
