Recipe: Grilled Skirt Steak with Corn-Tomato Relish

In celebration of Men's Health Month, enjoy this healthy Grilled Skirt Steak with Corn-Tomato Relish by . Packed with lean protein and fresh vegetables, it's a nutritious and delicious way to support men's health and well-being!

Ingredients

1 pound skirt steak or sirloin steak
¾ teaspoon kosher salt, divided
¾ teaspoon ground pepper, divided
1 ear corn, husked
3 tablespoons extra-virgin olive oil, divided
½ cup halved cherry tomatoes
¼ cup thinly sliced red onion
2 tablespoons torn fresh basil
1 ½ tablespoons rice vinegar
1 serrano chile, seeded and minced

Directions

Preheat grill to medium-high.

Sprinkle steak with 1/2 teaspoon each salt and pepper. Brush the steak and corn with 1 tablespoon oil.

Oil the grill rack (see Tip). Grill the corn, turning occasionally, until lightly charred and tender, 8 to 10 minutes. Grill the steak, turning occasionally, to desired doneness, 6 to 8 minutes for medium-rare. Transfer the steak to a clean cutting board and let rest for 10 minutes.

Cut the kernels from the cob. Combine in a medium bowl with tomatoes, onion, basil, vinegar, chile, the remaining 2 tablespoons oil and 1/4 teaspoon each salt and pepper.

Slice the steak thinly against the grain. Serve with the relish.

Recipe: Grilled beef & vegetable kebabs

As the weather warms up, it's the perfect time to fire up the grill and enjoy the season with these delicious Grilled Beef & Vegetable Kebabs by . Packed with flavor and nutrition, they're an ideal dish for any summer gathering!

Ingredients

¾ cup balsamic vinegar
¾ cup extra-virgin olive oil
2 tablespoons whole-grain mustard
1 tablespoon dried oregano
1 tablespoon dried rosemary
2 cloves garlic, sliced
½ teaspoon salt
½ teaspoon ground pepper
1 pound tri-tip sirloin steak, trimmed and cut into 32 chunks
16 button mushrooms
16 cherry tomatoes
1 small bell pepper (any color), cut into 16 pieces
16 (1 inch) chunks red onion

Directions

Whisk vinegar, oil, mustard, oregano, rosemary, garlic, salt and pepper together in a small bowl.

Skewer beef, mushrooms, tomatoes, bell pepper pieces and onion chunks, alternating evenly, on 8 metal or wooden skewers. Place the kebabs in a 9-by-13-inch baking dish and pour the marinade over them. Refrigerate (or store in a cooler packed with ice) for at least 2 hours and up to 8 hours.

Preheat grill to medium-high. Remove the kebabs from the dish; discard the marinade. Grill the kebabs, turning once, to desired doneness, 6 to 8 minutes total. To grill over your campfire, hold the skewers over the flames (but do not let the flames touch the food), turning regularly, until the meat is cooked to your liking, about 15 minutes for medium.

Fire up the grill for this vibrant Veggie Skewer recipe by ! Perfectly grilled yellow squash, zucchini, mushrooms, peppers, and corn come together for a burst of flavor and color. Drizzle with your favorite sauce – tzatziki, pesto, or Greek dressing – and enjoy a deliciously healthy meal!

Ingredients
• 1 yellow squash
• 1 zucchini
• 8 ounces cremini mushrooms, stemmed
• 1 small red onion
• 1 red bell pepper
• 1 green bell pepper
• 1 ear fresh corn, cut into 1-inch rounds
• Extra virgin olive oil, for drizzling
• Sea salt and freshly ground black pepper
• tzatziki, pesto, or Greek dressing for drizzling/serving

Instructions
• Heat a grill to medium-high and spray with nonstick cooking spray. Cut the vegetables into similar sized chunks and thread onto 4 metal skewers. Drizzle with olive oil and season with salt and pepper. Grill the skewers for 8 minutes per side or until the vegetables are tender and lightly charred. Remove from the grill, season to taste, and serve with desired sauce or dressing.

Prostate Cancer Understanding Prevention Screenings

The P.C.U.P.S. program, which is now called the P.C.U.P.S. Foundation started in March 2012. P.C.U.P.S. stands for Prostate Cancer Understanding Prevention Screenings. The intent of this program was designed to help increase the awareness to men’s health and wellness by providing Prostate Specific Antigen blood screenings (PSA). In October 2011, Tom Albrecht approached Marlette Regional Hospital about combining efforts to raise funds and create a higher awareness in the fight against cancer. From this meeting, the P.C.U.P.S. Program was created. The first ever fundraising event for P.C.U.P.S. came from a promotional event called Hunting for Health. Since March 2012, the P.C.U.P.S. program has raised over $80,000 and has paid for over 1,000 PSA screenings. Currently, P.C.U.P.S. Foundation has awarded grants to six hospitals throughout the thumb region and works with the University of Michigan Comprehensive Cancer Center - Urology Department. The P.C.U.P.S. Foundation is savings lives!
