This salad is an excellent choice for seniors during the summer. Watermelon provides fantastic hydration, while the soft feta and tender chicken offer easily digestible protein.
Ingredients
2 cups seedless watermelon, cut into bite-sized cubes (great for hydration)
1 cup grilled chicken breast, shredded or finely diced (easy to chew protein)
1 cup English cucumber, diced (peeled, if skin is difficult to digest)
1/4 cup feta cheese, crumbled (adds a savory kick and calcium)
2 tbsp fresh mint leaves, finely chopped
1 tbsp olive oil
1 tbsp fresh lime juice
A pinch of salt and black pepper
Instructions
Prep the Base: In a large bowl, gently toss together the cubed watermelon, diced cucumber, and chopped mint.
Add the Protein: Fold in the shredded grilled chicken. (Tip: If buying pre-cooked rotisserie chicken, opt for the breast meat and ensure it's finely diced or shredded for easier swallowing).
Dress It Lightly: Whisk the olive oil and fresh lime juice together in a small small cup. Drizzle over the salad and toss gently to coat.
The Finishing Touch: Sprinkle the crumbled feta cheese on top and add just a tiny pinch of salt and pepper to taste.
Serve: Serve immediately, or let it chill in the fridge for 15 minutes to make it extra refreshing.
