Dietitian confession: I eat sandwiches for lunch all the time. đŸ„Ș

I think we’ve set the bar way too high for what healthy eating is supposed to look like. If your healthy habits depend on having extra time, energy, and motivation, they’re going to be hard to maintain when life gets busy.

I’d rather help someone build simple habits they can stick with than chase perfection for a couple of weeks.

Today’s lunch: a rotisserie chicken sandwich. đŸ„Ș

One small nutrition change I’ve been making lately is relying a little less on deli meat and a little more on minimally processed protein sources when it’s practical.

Not because I’m afraid of deli meat.
Not because I think foods need to be “good” or “bad.”

The research does suggest that regularly eating processed meats is associated with an increased risk of colorectal cancer, but it’s important to keep that risk in perspective—an increased risk does not mean a high overall risk.

For me, this is simply a small, realistic shift that adds variety to my diet without creating unnecessary food rules. Some days it’s rotisserie chicken, some days it’s deli turkey, and both can fit into an overall healthy eating pattern.

Nutrition doesn’t have to be all or nothing. đŸ€

Not every satisfying dinner has to be complicated. Tonight was mixed greens, turkey burger, corn with lime + TajĂ­n, tortilla strips, and cilantro lime dressing.

A lot of salads end up being lettuce + dressing and then you’re rummaging through the pantry an hour later. Adding protein, carbs, crunch, and flavor makes a huge difference in actually feeling satisfied.

As a dietitian, I recommend convenience foods like this to patients all the time. Real life is busy and having realistic “plan B” meals helps you stay more consistent with your health goals instead of feeling like every meal has to be fully from scratch.

Tonight was leftover brown rice, broccolini from our CSA, and Kevin’s garlic chicken all thrown into one pan while solo parenting 😂

Easy dinners that don’t feel like sad dinners >>>

This one was baked salmon over one pot Israeli couscous with yellow squash, spinach, and pesto and it tasted way fancier than the amount of effort required 😂

As a dietitian, these are my favorite kinds of meals lately. Balanced, flavorful, satisfying and realistic for a busy weeknight. Bonus points because my toddler loved it too.

If your lunch leaves you hungry an hour later or ready for a nap by 2 pm, this is the kind of meal I’d build instead.

One of my favorite easy work from home lunches lately.

This pasta salad has 20+ grams of protein, extra fiber from the chickpea pasta, and enough staying power to actually keep me full through the afternoon without feeling overly heavy.

Honestly, meals like this are my favorite because you can make it once and take the mental load off lunch planning for the next few days.

This is one of those dinners I come back to all the time. Simple, balanced, and actually satisfying.

Nothing complicated, just protein + carbs + a lot of veggies for volume, which makes a big difference in how full you feel after.

Meals don’t have to be perfect to work - they just have to be realistic enough to repeat.

A repeat favorite over here 🌼

These shrimp tacos are one of my go-to realistic weeknight dinners because they come together so fast and still feel fresh and satisfying. Quick slaw, frozen shrimp, whatever toppings we have on hand, and more time to actually enjoy being outside together.

And honestly, because I wasn’t stressed trying to cook something from scratch, it made it so much easier to be present with my meal and actually listen to what felt good and when I was satisfied.

Repeat meals are not boring — they’re often what make weeknights work 💛

A realistic work from home lunch using leftovers 🍚

Warm rice and broccoli from last night’s dinner topped with spicy tuna, Bachan’s, and sesame seeds.

A reminder that balanced lunches do not need to be planned perfectly or made from scratch. Leftovers + convenience foods can make such an easy, satisfying meal on a busy work day.
