Tip Time! 🫶

If I preach anything it would be, "Freeze before baking and freeze after." ❄️

Freezing before keeps the nutrients intact for 6+ months and also a crucial step so it doesn't go bad.

If you can't finish your baked goodie(s) in 1-2 days slice them and place in the freezer for up to 2-3 months. The bran in fresh milled flour will continue to absorb the moisture even after being cooked, leaving your baked treat stale quicker than regular flour typically would.

Spotlight: Hard White! You would think opposite of soft white, but they do share a lot of similar qualities! 🌾

It is high in protein, but still has a mild, slightly sweet flavor, and light in color. Hard white can be very versatile. Most often it is used in yeast recipes like sourdough, rolls, sandwich bread/buns, pretzels, tortillas, etc. 🍞

One great thing about hard white is you can use it in soft white recipes by just adding a little bit more liquid. 🫗

This is the flour to pick if you have picky eaters! Of all the grains, hard white will resemble all purpose flour the most.

Spotlight: Soft White...introducing the modern wheat varieties! 🌾

This wheat berry is light in color and lower in protein content. But don't get confused, it still has the same, if not more, protein than store bought flour! Lower protein content just means it's not the ideal choice for bread making.

Soft white is a go to for waffles, pancakes, muffins, brownies, cookies, cake, etc. 🥞

A neat fact is a 50/50 combo of soft white and hard white creates all purpose flour!

Choose this berry if you're looking for kid-friendly, soft, light, and fluffy! 🍪
