A salad where almost everything is cooked? Great for digestion and perfect for picnics, potlucks or if you’re lucky, that work-from-park lunch.

A good chimichurri dressing can make almost anything taste exciting. Put it on a shoe and I’d probably still take a bite. Here, though, it gets paired with a lineup of real heavy hitters: quinoa, paneer, and butter beans, all coming together in a salad that eats more like a grain bowl.

Fresh May produce keeps things lively. Peppery arugula and tender asparagus bring brightness and crunch, while the chimichurri cuts through everything with sharp herbs and acidity. The result is hearty, protein-packed, and incredibly satisfying without feeling heavy.

Pack it up for a sunny picnic, bring it to a Memorial Day gathering, or make a batch for weekday lunches. And accept the rave reviews graciously.

Ayurveda considers yogurt deeply nourishing, but this comes with caveats. Its cold, heavy, and slimy qualities can make it harder to digest and, if eaten improperly, capable of clogging the body’s channels. Surprising? It was for me too. To make yogurt more digestible, it’s traditionally brought to room temperature, whipped with water or a touch of honey, or gently spiced before eating, ideally at lunch, when digestive fire is strongest. Traditional preparations like takra (Ayurvedic buttermilk), raita, and this zesty tzatziki get this balance just right.
Whisk room-temperature yogurt with a splash of water until light and creamy, then stir in crushed garlic, lemon juice, olive oil, salt, and black pepper. Fold in grated cucumber that’s been squeezed dry, along with plenty of fresh dill and mint. Cooling, bright, and much easier on digestion.

Harissa-spiked, garlicky, and ready in a flash. Regular pasta paired with chickpeas for more fiber and protein — with broccolini winding through every strand. Simple, punchy, and weeknight-approved.

👩🏽‍🍳 Zucchini-Lentil Tacos w/ Jalapeño Sauce
Roasted zucchini, black beluga lentils, and a creamy jalapeño sauce that ties it all together. Bright, Tex-Mex inspired, and just the right amount of heat.

👩🏽‍🍳 Chimichurri Paneer, Butter Bean & Quinoa Salad
Quinoa, paneer, and butter beans dressed in a sharp chimichurri with arugula and asparagus. It eats like a grain bowl — hearty, protein-packed, and made for Memorial Day tables or weekday lunches.
