MINI CHICKEN PESTO PIZZAS

Ingredients
- 1 lb chicken breast, cooked and shredded
- 1/4 cup pesto sauce (store-bought or homemade)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup Parmesan cheese, grated
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped (for garnish)
- 4 low-carb mini pizza crusts (almond flour, cauliflower, or flaxseed-based)
- Olive oil (for brushing)
- Salt and pepper to taste

Instructions
1. Preheat oven to 400°F (200°C).
2. Place mini pizza crusts on a baking sheet lined with parchment paper.
3. Brush the crusts lightly with olive oil and bake for 5-7 minutes to crisp them up.
4. In a bowl, toss the shredded chicken with pesto sauce until fully coated.
5. Remove crusts from the oven and evenly distribute the pesto-coated chicken over each mini crust.
6. Sprinkle shredded mozzarella and Parmesan cheese on top of the chicken.
7. Add halved cherry tomatoes on top and season with salt and pepper.
8. Return the pizzas to the oven and bake for another 8-10 minutes, or until the cheese is melted and bubbly.
9. Remove from the oven and garnish with fresh basil before serving.

- 1 lb ground chicken, cooked & drained
- 1 packet taco seasoning
- 1 can mild Rotel tomatoes, drained
- 1 cup shredded Mexican-style cheese
- 1/4 cup sliced jalapeños
- 1/4 cup diced red onion
- 1/4 cup diced tomatoes
- 1/4 cup fresh cilantro, chopped
- 1/4 cup sour cream (optional, for topping)
- 1/4 cup guacamole (optional, for topping)
- 1/4 cup salsa (optional, for topping)

[Instructions]
1. Preheat oven to 350°F (175°C). Line a large sheet pan with scoop chips in a single layer.
2. In a skillet, cook ground chicken over medium heat until browned. Drain the excess fat, then add taco seasoning and water as per package instructions.
3. Spoon seasoned ground chicken evenly over the chips.
4. Sprinkle drained Rotel tomatoes over the chicken, then top with shredded Mexican-style cheese.
5. Add sliced jalapeños on top for an extra kick.
6. Bake for 10-12 minutes until the cheese is melted and bubbly.
7. Remove from the oven and top with diced red onion, diced tomatoes, cilantro, sour cream, guacamole, and salsa.

- 1/2 cup frozen cherries (pitted)
- 1 tbsp honey (optional, for extra sweetness)
- 2 tbsp cocoa powder (unsweetened)
- 1/4 cup dark chocolate chips
- 2 tbsp crushed graham cracker crumbs

[Instructions]
1. Blend the Good Culture Cottage Cheese, Fairlife Chocolate Protein Shake, frozen cherries, honey (if using), and cocoa powder until smooth and creamy.
2. Stir in the Lite Cool Whip gently until the mixture becomes light and fluffy.

Dessert hack!!! 🍫
Mix 1 container of fat-free Cool Whip with 1 box of sugar-free Jell-O mix (I used chocolate pudding) and pop it in the freezer!! It turns into the creamiest, chocolatey whipped dessert—almost like chocolate mousse ice cream!! I topped mine with chocolate shavings because you gotta live a little – 6 Tbsp.

RECIPE :
2 tsp Nescafé Gold Espresso
1/3 cup water
Caramel drizzle around the cup
1/3 cup oat milk
1/3 cup vanilla creamer
Ice 🧊🧊

Top with whipped cream and cinnamon crunch 😍

Soooo creamy, sweet, and tastes like a coffee shop drink at home!! Definitely one of my favorite little treat drinks lately 🤎
