[CHICKEN TACO NACHOS]
[Ingredients]
- 1 bag scoop-style tortilla chips (Tostitos Scoops or similar)
- 1 lb ground chicken, cooked & drained
- 1 packet taco seasoning
- 1 can mild Rotel tomatoes, drained
- 1 cup shredded Mexican-style cheese
- 1/4 cup sliced jalapeños
- 1/4 cup diced red onion
- 1/4 cup diced tomatoes
- 1/4 cup fresh cilantro, chopped
- 1/4 cup sour cream (optional, for topping)
- 1/4 cup guacamole (optional, for topping)
- 1/4 cup salsa (optional, for topping)
[Instructions]
1. Preheat oven to 350°F (175°C). Line a large sheet pan with scoop chips in a single layer.
2. In a skillet, cook ground chicken over medium heat until browned. Drain the excess fat, then add taco seasoning and water as per package instructions.
3. Spoon seasoned ground chicken evenly over the chips.
4. Sprinkle drained Rotel tomatoes over the chicken, then top with shredded Mexican-style cheese.
5. Add sliced jalapeños on top for an extra kick.
6. Bake for 10-12 minutes until the cheese is melted and bubbly.
7. Remove from the oven and top with diced red onion, diced tomatoes, cilantro, sour cream, guacamole, and salsa.
8. Serve immediately and enjoy the loaded chicken taco nachos!
