Easy Pickled Beets! 💫

These are soooo easy to make and soooo yummy! Get on it! 🤘🏼

Ingredients: 2-3 medium beets, raw apple cider vinegar, fresh dill, sea salt

How to:

1) Boil 2-3 medium size beets in water with 1 Tbsp raw for 45-60 min or until you can easily pierce with a fork.

2) Cool beets in a bowl of cold water for 10 min and then peel skin with hands (they’ll turn red!) or with a peeler.

3) Cut into bite size pieces and add the juice of 1 lemon and 1/4 cup (or more, to taste) raw apple cider vinegar and a few dashes of sea salt.

4) Stir and let marinate overnight in a sealed glass container.

5) In the morning stir again and add chopped fresh dill and enjoy!

✨GRATEFUL✨I received this beautiful email yesterday from a client I worked with this winter. I am so happy for her. I loved working with her. I love all my clients. After 8 years of coaching, I officially stopped seeing nutrition/wellness clients a few months ago. It was a difficult decision that took me over a year, but I listened to my intuition, trusted myself and trusted that the universe would guide me to my next chapter. It has and I’m so very excited for what’s in store. Here’s to helping support each other on our journeys, sharing love and compassion with others and ourselves. “April Fools’ Day may seem like a silly tradition, but silliness and play are in fact vitally important. I take as many opportunities as I can this month to have fun with my inner child. I think of the things I loved to do when I was little, and I try some of them again. I also remind myself to see the world through the eyes of this precious child, who is curious and full of wonder and delight. It is never too late to have a happy childhood, and I am learning how to thoroughly enjoy my life.”

My new obsession: Southern Collard Greens with Bacon 🥓🥬👩‍🍳 I cannot get enough of this dish. I’ve made it twice in 2 weeks! I suspect I’ll make it again next week too! I love using my homemade chicken bone broth as well.

Ingredients 
* 1 Tbsp avocado oil
* 4 pieces bacon, cut into tiny bite-sized pieces
* Large sweet onion, finely diced
* 3 cloves garlic, finely minced
* 2 large bunches collard greens washed, drained, & chopped
* 2 cups chicken bone broth
* ½ teaspoon salt to taste
* ¼ teaspoon black pepper to taste
* 2 Tbsp apple cider vinegar

Happy New Year! 💫🔆💫🔆 “As the new year begins, I notice how much emphasis is on resolutions. It seems as if we receive nearly constant messages about all the things we need to change about ourselves. That may be true for some, but I choose to focus on acceptance. I no longer wait to be perfect - I love and approve of myself as I am, right here and right now. While I may want to make improvements here or there, I allow myself to take a deep breath of life and just be. All is truly well in my wonderful world.”

🥩Slow Cooker Beef Short Ribs🥩

Made this with my mom yesterday when I was home in Minneapolis. Hot dang it was delicious. Took some on the plane with me today. So good. Need to make again ASAP.

Ingredients
* 4 pounds beef short ribs, boneless or bone-in (we used bone-in)
* 1 Tbsp salt
* 1 tsp black pepper
* 1.5 cups beef broth
* 1.5 cups red wine
* 1/4 cup balsamic vinegar (or worcestershire sauce)
* 2 tsp garlic powder
* 2 tsp onion powder
* Several sprigs fresh rosemary & thyme

Instructions 
* Season the short ribs with salt and pepper. Heat a large skillet over high heat. Sear the short ribs on each side for about 60 seconds per side. 

* Pour the beef broth, wine, worcestershire sauce, garlic powder, onion powder and remainder of salt & pepper into a slow cooker and stir together. Place the short ribs into the liquid.

* Place rosemary & thyme sprigs on top of meat and cover. Cook on low for 6-8 hours, until meat is tender.
