A ritual for years now – Sunday meal prep for the week.

The weeks where I travel for work and don’t meal prep, I totally feel off. Meal prepping has helped me countless times have healthy options to choose for lunch and dinner, rather than reaching for takeout or other instant option.

This week’s menu (for 2 as I prep for both my husband and me):
- Grilled chicken (for me) and salmon (for my husband)
- Mongolian ‘beef’ (sub tofu) with steamed broccoli and basmati rice
- Taco salad
- Fresh sourdough (one loaf for us and one for my sister-in-law, by request)
- Chicken sausage and grilled asparagus (for breakfast w/ the not pictured hard boiled eggs)

My husband prepped 1 the riff on Mongolian beef and I did the rest. We finished all in about 2 ½ hours – and now we have easy-to-grab options for the week.

is a wonder from the moment you arrive. Awe in its shear beauty and in the natural ebbs and flows over millions of years that formed what we had the fortune to experience today.

Today was a bucket list item. And it was even more than I expected.

Travel is joy. Travel is sustenance.

One is never too old for snow angels. (And said I wouldn’t do it…) I had to fall into this one on the edge of the drive...
