Life lately and saying farewell to💔Stephen Colbert’s show.I had the privilege of attending a couple of tapings of his show in NYC, and now I’ll treasure those laughs and memories more than ever. I can’t imagine not laughing at Stephen Colbert’s Jokes and insights every week. He taught me to process working in politics and policy with humor and laughs. It’s a sad day for the USA 🇺🇸 and our right to free speech, because one of our greatest entertainers is being silenced by an insecure despot/tyrant and heartless billionaires But this is not the end. We must all continue to protest and speak up for Democracy and free speech in the USA.

I love because we are both Southerners, Liberal/Progressive Catholics who grew up going to church and being obsessed with Lord of The Rings . We both believe that our faith teaches us above all to advocate and care for the most vulnerable and to speak up against tyrants and Christian Nationalism. We both worked very hard to tame our southern accents in NYC 😂 I’ll miss him so much.

Happy, Feliz Lunar New Year 🧧 🐴 💕🌕🌒
Love note to Chinatown & Little Tokyo in NYC- my favorite places on earth, because immigrants Make America Great. NYC 🗽 & New Orleans would be so dull without the contributions of Asian communities.

I tend to talk mostly about my Latin American roots, but I am also proudly Asian 🇯🇵🗾🎌🏯🇨🇳Yes, it’s possible to be Latino Asian. Let me tell you, Asian Latin food fusion is so delicious.

I grew up eating Guatemalan & Mexican food, and also Chinese and Japanese food. 🥠🥢🥮🥡.
My favorite Asian foods growing up: Jianbing ( Chinese wheat pancakes), homemade ramen with umeboshi (pickled plums) to takuan (pickled daikon) to benishoga (pickled red ginger), tofu and 🍵 matcha!

By proudly celebrating our rich immigrant cultures, we fight hatred & intolerance with love & flavor.

May the year of horse 🐴 bring us all courage to stand up for human rights.

Suelo hablar principalmente de mis raíces latinoamericanas, pero también soy orgullosamente asiática 🇯🇵🗾🎌🏯🇨🇳 Sí, es posible ser latinoasiático. Les cuento que la fusión culinaria asiática-latina es deliciosa. Crecí comiendo comida guatemalteca y mexicana, además de china y japonesa. 🥠🥢🥮🥡. Mis comidas asiáticas favoritas de la infancia: Jianbing (panqueques de trigo chinos), ramen casero con umeboshi (ciruelas encurtidas), takuan (daikon encurtido) y benishoga (jengibre rojo encurtido), tofu y matcha.
Al celebrar con orgullo nuestras ricas culturas inmigrantes, combatimos el odio y la intolerancia con amor y sabor.

English in profile ¡Dejen salir a nuestros hijos de los centros de detención de inmigrantes! ¡Permitan que nuestros hijos tengan acceso a alimentos seguros, limpios y nutritivos!

 El derecho a una alimentación limpia, segura, nutritiva y culturalmente humilde es un derecho humano fundamental. Hoy en día, a miles de niños detenidos por las autoridades migratorias en Estados Unidos se les niega el acceso a alimentos seguros y nutritivos, una nutrición adecuada y atención médica, mientras sufren la separación familiar y un trauma severo.
Ya todo el mundo ha visto las imágenes de Liam Conejo Ramos detenido con un sombrero de conejo. Ver el miedo y el trauma en sus ojos me rompió el corazón. Creo que todas las personas de buena conducta y humanidad sienten una profunda empatía y pesar por el trauma que están viviendo Liam y otros niños inmigrantes.

La historia de Liam representa el sufrimiento y la desnutrición de miles de otros niños detenidos. Participe políticamente y llame a sus congresistas y senadores electos para exigir la liberación de todos los niños detenidos y cambios legislativos que protejan los derechos humanos de los inmigrantes. Sea amable con las comunidades que sufren discriminación racial; incluso una simple sonrisa a un paciente o persona que se sienta oprimida y víctima puede hacer que una persona se sienta segura y bienvenida.
La historia no ve con buenos ojos a la gente común y a los trabajadores de la salud que permanecen en silencio o incluso son cómplices de las violaciones de los derechos humanos.
Tu voz es importante, especialmente si eres profesional de la salud. Tu voz puede influir en la opinión pública, lo que puede generar cambios en las políticas.

The right to clean, safe, nutritious and culturally humble food is a basic human right. Today thousands of children being detained by immigration authorities in the USA are being denied access to safe, nutritious food, adequate nutrition and healthcare while experiencing family separation and severe trauma

By now, the whole world has see the images of Liam Conejo Ramos being detained while wearing a bunny hat. Seeing the fear and trauma in his eyes broke every single part of my heart. I think all people of good moral character and with a sense of humanity feel deep empathy and sorrow for the trauma Liam and other immigrant children are experiencing. 

Liam’s story- he represent the suffering and malnutrition of thousands of other children being held. Be politically engage and call your elected congress people and senators and demand for the release of all children being detained and legislative changes that protect the human rights of immigrants.  Be kind to the communities being racially profiled- even just smiling at a patient or person who may be feeling oppressed and target can make a person feel safe and welcomed. 
History doesn’’t look kindly on everyday people or healthcare workers who are silent or even complicit with human rights violations. 
Your voice is important, especially if you are healthcare professional. Your voice can begin to shape public opinion, which can bring about changes in policy.

If you believe that it is acceptable to traumatize a 5-year old child while he stands alone in the cruel, bitter Minnesota winter surrounded by abusive, cowardly men who hide their faces in tactical gear while carrying assault weapons- then I don’t want you to be part of my life. 

We can either suffocate under the oppression of authoritarianism or resist it. 
Even if you are being directly affected yet, authoritarianism will target any and all who oppose. The time to peacefully protest, resist, and politically organize is now or never. What will it take for your to speak up against the horrific human and civil rights abuses taking place in our country.  If you love this country as much as I do- the time to speak is now!  What will you tell your children and grandchildren or nieces when they ask what you did when authoritarianism knocked on your door?  Did you speak up for the well being of all children including immigrant children and children from ethnic and racial minorities? 

Si crees que es aceptable traumatizar a un niño de 5 años que se encuentra solo en el cruel y gélido invierno de Minnesota, rodeado de hombres abusivos y cobardes que ocultan sus rostros con equipo táctico mientras portan armas de asalto, entonces no quiero que formes parte de mi vida.

Podemos sucumbir a la opresión del autoritarismo o resistirnos a él.
Aunque aún no te veas directamente afectado, el autoritarismo atacará a cualquiera que se le oponga. El momento de protestar pacíficamente, resistir y organizarse políticamente es ahora o nunca. ¿Qué se necesita para que alces la voz contra las horribles violaciones de los derechos humanos y civiles que están ocurriendo en nuestro país? Si amas este país tanto como yo, ¡el momento de hablar es ahora! ¿Qué les dirás a tus hijos, nietos o sobrinos cuando te pregunten qué hiciste cuando el autoritarismo llamó a tu puerta? ¿Defendiste el bienestar de todos los niños, incluidos los niños inmigrantes y los niños de minorías étnicas y raciales?

Venezuela libre de Maduro y Trump. Thinking of my Venezuelan friends today & all Venezuelans especially those hiding from USA bombs & for Venezuelan immigrants in the USA being dehumanized and racially profiled.

The people of Venezuela are kind, warm, and family oriented. They make my favorite food
- arepas con plátanos, frijoles y aguacate.
I pray & hope for safety and freedom for them.

Only cowards bomb a civilian population without warning civilians & prioritizing their well-being, health & safety. All Americans should be beyond concern that we are bombing countries without congressional oversight and approval.

Who is next? Will it stop with Venezuela or is Nicaragua, Colombia, Guatemala, Panama, Mexico, Brazil, Bolivia, Cuba or any other Latin American country next? Where are Latinos suppose to feel safe?We are racially profiled & discriminated in the USA and now the threat of war looms over all of Latinoamérica.

By the way far right Venezuelans celebrating- y’all better get ready. They will try to detain and deport as many Venezuelans as they can from the USA using the profits from the Venezuelan oil they’ll steal…. It’s the truth

No puedo retractarme de las palabras que nunca dije”
Mi vocación en la vida es defender la salud pública, la nutrición, los derechos humanos y la salud de género, sexual y reproductiva.
Mi título en salud global se centró en la salud de género, sexual y reproductiva.
Soy educadora de partos. Soy dietista pediátrica y he realizado investigaciones sobre desnutrición infantil, programas de prevención del VIH de madre a hijo y diseñe intervenciones y estudios de investigación sobre la diabetes gestacional. Si no tengo el valor de defender la salud, la nutrición y los derechos humanos de las mujeres inmigrantes que sufren discriminación racial y detención inhumana, mejor me busco otro trabajo.
Mi deber es defender a todos los pacientes, especialmente a los más vulnerables. Cómo latina, mi deber es luchar por los derechos de las mujeres latinas que sufren los abusos más deplorables en la historia moderna de Estados Unidos. Esta publicación probablemente provocará reacciones negativas, mensajes de odio e incluso la pérdida de empleos, pero, francamente, me importa un bledo.
Si no alzo la voz ahora contra estas injusticias, me arrepentiré el resto de mi vida. Les animo a leer este post para que se informen sobre los abusos que se cometen en nuestro país. Por favor, tengan el valor de compartirlas. Voten, alcen la voz, llamen a sus funcionarios electos, protesten pacíficamente. Su voz importa.

Did you know this was happening in the USA?

“It’s so loud, inside my head
With words that I, should have said
As I drown, in my regrets
I can’t take back, the words I never said”

My calling in life is to advocate for public health, nutrition, human rights, and gender, sexual and reproductive health.

My global health degree focus was gender, sexual and reproductive health.
I am child birth educator. I am a pediatric dietitian who has conducted child malnutrition research, mother to child HIV prevention programs, and designed gestational diabetes interventions/ research studies. If I don’t speak up for the health, nutrition and human rights of immigrant women being racially profiled and inhumanely detained, I might as well just find another line of work.

My duty is to advocate for all patients, especially the most vulnerable. As a Latina, my duty is to fight for the rights of Latina women who are suffering some of the most deplorable abuses in modern USA history. This post will likely lead to backlash, hate message, and even loss of jobs but frankly I don’t give a damn.

If I don’t speak up now against these injustices, I will regret it for the rest of my life. I encourage you to read these slides, so you can be informed about the abuses being carried out in our country. Please be brave enough to share it. Vote, Speak Up, Call your elected officials, peacefully protest. Your voice matters.
