Save these 2 types of Korean flavor recipes.: Bibimbap and Japchae perfection 😍😋❣️

🍁 Recipes:

1️⃣Bibimbap (Korean Mixed Rice and Veggie Bowl)

🍂Instructions:
🏵️ For BEEF & MARINADE:
8oz beef tenderloin, finely sliced
1/4 green apple, grated
3 garlic cloves, minced
1 tbsp soy sauce
1 tbsp brown sugar
2 tsp sesame oil

🏵️ For VEGETABLES:
1 carrot, cut into matchsticks
1 zucchini , cut into matchsticks
1 bunch of spinach
8 dried shiitake mushrooms
2 cups bean sprouts
2 tsp garlic , minced
8 tsp olive oil, divided
1/2 tsp salt
1.5 tsp soy sauce
1/4 tsp fish sauce
1/4 tsp white sugar
Sesame oil

🏵️ For BIBIMBAP SAUCE:
3 tbsp gochujang paste
3 tbsp rice vinegar
1 tsp soy sauce
3 tsp white sugar
1 garlic clove , finely grated
1 tsp sesame oil

🏵️ For SERVE:
White rice
Egg
Sesame seeds

🍂Instructions:
1.BIBIMBAP SAUCE:
Mix ingredients until sugar is dissolved.

2.MARINATED BEEF:
Mix the marinade in a bowl, then add beef. Marinate for 30 minutes to overnight.

Heat 2 tsp oil in a large skillet over high heat. Let excess marinade drip off then add beef. Cook for 3 - 4 minutes until cooked and there's some caramelised bits, then remove from skillet.

Keep warm until required or reheat to warm.

3.PREPARE VEGETABLES:
Soak mushrooms in a large bowl of boiling water for 30 minutes, or until rehydrated. Drain, squeeze out excess water, then slice.

Place carrot and zucchini in separate bowls, sprinkle each with 1/4 tsp salt, toss, leave for 20 minutes then drain excess liquid.

4.COOK VEGETABLES:
Get 2 skillets going if you can!

Shiitake: Heat 2 tsp oil in a skillet over medium high heat. Cook mushrooms for 2 minutes. Add 1.5 tsp soy, 1/4 tsp sugar, 1/2 tsp of garlic. Stir for 1 minute, then remove.

Carrot: Add 2 tsp oil into the skillet, cook carrot until just tender (5 minutes), then remove.

Zucchini: Cook as with carrot for 4 minutes.

Spinach: Heat 2 tsp veg with a splash of sesame oil. Saute until starting to wilt. Add 1/2 tsp garlic, and salt to taste, stir, then remove. When cool, squeeze to drain out excess liquid.

Beansprouts: Simmer in water for 5 min or steam in microwave for 3 min until floppy. Drain under cold water, then cool. Squeeze out excess liquid with hands, place in bowl. Mix with 2 tsp sesame oil, 1 tsp garlic, 1/4 tsp fish sauce.

Vegetables can cool, they are meant to be at room temp or slightly warm.

5.ASSEMBLE:
Fry eggs in a skillet to your taste (I like mine with runny yolks).

Place warm rice in bowls.

Top with vegetables and beef, as pictured in post, then lastly, the egg.

Sprinkle with sesame seeds, drizzled with sesame oil. Serve with Bibimbap Sauce!

2️⃣Japchae (Korean Glass Noodle)

🍂Instructions:
🏵️ For BEEF MARINADE:
1/2 lb beef, thinly sliced (such as sirloin, chuck, short ribs or tri-tip)
2 tsp soy sauce
2 tsp white sugar
2 tsp finely minced garlic
1/2 tsp black pepper

🏵️FOR THE SAUCE:
1/4 cup soy sauce
2 tsp white sugar
1/2 tsp finely minced garlic
1 1/2 tbsp sesame oil
1/2 tsp salt
1/2 tsp black pepper

🏵️ For NOODLES & VEGETABLES:
250g/ 8oz Korean sweet potato noodles
4 tbsp vegetable oil
2 eggs, lightly beaten
1 tsp salt , divided
1/2 yellow onion, sliced into wedges
3 green onion, white & green parts separated
200g/7oz shiitake mushrooms, sliced
1 carrot, peeled, cut into matchsticks
1 red bell pepper, sliced
4 1/2 cups baby spinach
2 tbsp white sesame seeds

🍂Instructions:
1.QUICK BEEF MARINADE:
Put beef in a bowl. Add marinade ingredients, then mix. Set aside.

2.SAUCE AND NOODLES:
Sauce – Mix the Sauce ingredients in a very large mixing bowl.

Cook sweet potato noodles per packet directions (normally 8 min in boiling water). Drain, briefly rinse under tap water then shake off excess water well. Add noodles into the bowl with the dressing. DO NOT MIX.

Heat a large skillet over medium-low heat. Add 1 tsp oil. Add beaten eggs swirl skillet to egg covers surface in a thin layer. Cook until it’s just set, about 2 to 3 minutes, then flip over and cook for another minute. Slip omelet onto a plate and let it cool.

3.VEGETABLES :
Heat 2 tablespoons of oil in a large non-stick pan over high heat. Cook the onion, white part of green onion and shiitake mushrooms with 1/2 tsp salt for 3 minutes, stirring constantly, just until starting to soften but not going golden. Pour on top of the noodles – don't mix yet!

Using the same pan still on high heat, heat 1 tbsp oil then cook the carrot and bell pepper for 2 minutes, constantly stirring. Add spinach, green onion and the final 1/2 tsp salt. Keep cooking for 1 1/2 minutes until the spinach is wilted. Transfer into the noodle bowl – still don't mix!

In the same pan, heat 1 tbsp of oil still on high heat. Add beef and cook for 1 1/2 minutes until very lightly golden and just cooked through. Add to the noodle bowl. Don't mix!

4.ASSEMBLE:
Slice cooled egg omelet into thin ribbons and add to the noodle bowl. Don’t mix!

Add most of the sesame seeds (reserve some for topping). NOW you can mix! Toss, toss, toss.

Transfer into a serving bowl, sprinkle with remaining sesame seeds. This is meant to be eaten warm, not piping hot. Enjoy!

2 cups cooked white rice
150g beef (thinly sliced)
1 carrot (julienned)
1 cup spinach
1 cup bean sprouts
1 cup mushrooms (sliced)
2 eggs
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
1 clove garlic (minced)
Salt and pepper (to taste)
Gochujang (Korean chili paste)
Sesame seeds
Cooking oil
👩‍🍳 How to Make:
Prepare the vegetables:
Boil the spinach and bean sprouts separately for about 1 minute, then drain and season with a little salt and sesame oil.
Sauté the carrots and mushrooms in a pan until soft.
Cook the beef:
Marinate the beef with soy sauce, garlic, sugar, sesame oil, salt, and pepper.
Fry the beef until fully cooked.
Cook the eggs:
Fry the eggs sunny-side up.
Assemble the bowl:
Place hot rice in a bowl. Arrange the vegetables and beef neatly on top.
Add sauce and serve:
Add a spoon of gochujang and sprinkle sesame seeds.
Mix everything together before eating.
