Mushroom Truffle Pizza 🍕🌱 Seriously, this recipe is SO good. The perfect comfort food for your quarantine made with an almond four crust.
Ingredients:
• 2 tbsp olive oil, plus more for brushing
• 4 oz baby bella mushrooms, stems removed and sliced into 1/4-inch slices
• 2 large garlic cloves, finely chopped
• 1 tbsp chopped fresh rosemary
• 2 tsp chopped fresh thyme leaves (plus more for decoration)
• 5 oz grated mozzarella cheese
• 3 oz Parmesan cheese
• White truffle oil, for drizzling (2 tsp roughly)
Instructions:
• Start by making the crust. I used almond flour. Making the dough is pretty simple. Follow the instructions on the box. Just make sure you roll the dough thin enough! Cook the crust ~5 minutes. The crust can be a little dry so add a thick layer of olive oil once it’s out of the oven.
• Prepare mushrooms: Heat large skillet over very high heat. Add the olive oil, followed by the sliced mushrooms. Continue to saute for 5 to 6 mins. Season to taste with s + p.
• Add the chopped garlic and continue to saute for ~1 to 2 mins. Add the chopped rosemary and thyme, and continue to cook over medium high heat ~ 1-2 mins. Set aside mushrooms to cool.
• Take pizza crust out of the oven. Brush the top of the dough lightly with olive oil. Sprinkle the mozzarella cheese evenly over the pizza, leaving a 3/4-inch border on the edges. Spoon the mushrooms and distribute them evenly on top of the cheese. Then add a layer of Parmesan cheese to the top.
• Bake the pizza another ~10 minutes. Remove from oven and immediately drizzle truffle oil. Add additional thyme & serve 💫

Went to the farmers market and picked up these beautiful purple radish sprouts and edible flowers 🌸 So I incorporated them into a kale salad with roasted beets, pistachios, and crumbled goat cheese to make the perfect spring time salad 🌿

I tried Stanley Tucci’s pasta recipe & my only regret is not trying it sooner 🍝🤌🏼
Spaghetti alla nerano is what you need this summer 🌞🌿 Made without cream, this pasta is light and fresh with hints of zucchini and basil. Delicious & simple.
Highly recommend reading the book Taste to learn more about his life & favorite recipes ☺️

Need a recipe for Memorial Day? Try these super juicy, tender chicken kebabs made with a delicious garlic yogurt marinade. Thrown on the grill for that smokey, charred flavor and topped with fresh lemon & dill 🔆🌱
Ingredients:
• 3/4 cup plain Greek yogurt
• 1/4 cup olive oil, plus more for drizzling
• Zest and juice of 1 lemon
• 2 cloves chopped garlic
• 1/2 tsp dill
• 1/2 tsp paprika
• 1/4 tsp turmeric
• 1/8 tsp cayenne pepper
• 2 tsp salt
• 1/4 tsp pepper
• Boneless, skinless chicken thighs, cut into 2-inch pieces
• Lemon wedges, for serving
Directions:
• In a medium bowl, combine yogurt, oil, lemon zest and juice, garlic, dill, paprika, turmeric, cayenne, salt, and pepper.
• Add chicken to yogurt marinade and coat. Cover with plastic wrap and refrigerate for at least 2 hours.
• Preheat grill or grill pan to medium-high. Thread chicken onto 10-inch skewers and season with salt and pepper.
• Grill chicken ~6 to 8 minutes per side or if you don’t have a grill/grill pan bake in oven at 375 for ~20-25 minutes.
• Drizzle with olive oil and serve with lemon wedges 🍋
