Honestly? It’s not about picking sides.

Raw vegetables can help preserve certain heat-sensitive vitamins like vitamin C and folate. But cooking isn’t the enemy — it can actually increase the availability of some antioxidants (like beta-carotene and lycopene) and make veggies easier to digest.

The real win? Mixing it up. Add a fresh salad to your day, roast your broccoli at dinner, and maybe sauté your spinach with olive oil. Variety gives you the best of both worlds — and keeps meals interesting!

And with the recent Cyclospora outbreak linked to recalled iceberg lettuce, you may be wondering if you should avoid raw produce altogether. There is no need to avoid all raw produce. The important thing is to stay up to date on food recalls, wash fresh produce under running water, prevent cross-contamination, and follow public health guidance if a specific product has been recalled. If you’re concerned about parasites, the CDC notes that cooking produce to at least 158°F can kill parasites.

Food safety matters, and so does making sure you’re getting the nutrients your body needs. 💚
