🥧 Healthy Mini Chicken Pot Pie Bites
🛒 Ingredients
Filling:
✨ Shredded rotisserie chicken breast
✨ Diced carrots
✨ Frozen peas
✨ Diced onion
✨ 1 clove garlic, minced
✨ ½ cup low-sodium chicken broth
✨ ¼ cup plain nonfat Greek yogurt
✨ 2 tbsp Olive oil
✨ 2 tbsp whole wheat flour
✨ Salt, pepper, thyme, garlic to taste
Crust:
✨ 1 sheet whole wheat puff pastry
👩🍳 Instructions
Preheat oven to 375°F. Spray a muffin tin lightly with avocado oil spray.
✨Make the filling:
Heat olive oil in a pan over medium heat.
Sauté onion, garlic, carrots until softened, stir in flour and add chicken broth and stir until thickened. Fold in chicken and peas. Remove from heat and stir in Greek yogurt. Season with salt, pepper, thyme.
✨Assemble:
Press dough circles into muffin tin wells. Spoon filling evenly into each. Bake 18–22 minutes until golden.
