Have you heard of ancient grains? I like heirloom wheat like einkorn and khorasan flour. I used a dish generator AI and my own intuition to make a natural sugar banana bread. I also added about a 1/2 to 3/4 cup chocolate chips. Enjoy this healthier version of banana bread! We are a nut free household around here which is why we do chocolate chips not nuts. Kid approved.
Rich and moist banana bread with einkorn flour, 4 ripe bananas, and a balanced sweetness from maple syrup and monkfruit.
ingredients
2 ½ cups einkorn flour
1 ½ teaspoons baking soda
½ teaspoon salt
4 ripe bananas, mashed
3 large eggs
⅓ cup reduced maple syrup
2 tbsp monkfruit sweetener
½ cup unsalted butter, melted and cooled
1 teaspoon vanilla extract
½ teaspoon ground cinnamon (optional)

Preheat oven to 350°F. Grease a 9x5-inch loaf pan or line with parchment paper.

In a large bowl, whisk together einkorn flour, baking soda, salt, and cinnamon if using.

In another bowl, combine mashed bananas, eggs, melted butter, maple syrup, monkfruit sweetener, and vanilla extract. Mix well.

Pour the wet ingredients into the dry ingredients and gently fold until just combined. Avoid overmixing. Fold in chocolate chips (if you use them).

Pour batter into prepared loaf pan and smooth the top evenly.

Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.

Let bread cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
