This Green Goddess Chicken with spring veggies is the perfect weeknight meal. Cook time is less than 30 minutes and if you are focused and not worried about filling your wine glass you could realistically prep this in less than 10 minutes for a one pan, throw it in the oven, and forget it meal!

Sunday’s are for big breakfasts, , and prepping for the week ahead.

One way I can always get The Little involved in the kitchen is by having him prep his snacks for the week ahead. One of his favorites remains these 3 ingredient date bars. They come together in no time and offer tremendous savings over a popular, pre-packed, name brand. They are also a much healthier option to store bought granola bars that have an shocking amount of total carbs. We press the mixture into a snack bar maker tray and let them chill in the fridge for a couple hours before wrapping each in wax paper for an easy to grab treat.

Peanut Butter Jelly Bars

10-15 dates, pitted
1/2 cup unsweetened dried cherries
1 cup peanuts (either sea salt or unsalted)
Purée in food processor for about a minute (until a workable mixture forms.)

There are many variations to these bars so get creative with dried fruits, nuts, and flavors! I’m sure you’ll come up with something amazing! Don’t forget to share your ideas!

I think one of the reasons I love cooking so much is because you don’t have to follow the rules to get a perfect outcome.

The recipe I had for this Indian Spiced Shepherd’s Pie had extra steps and would’ve taken more time then I intended to spend on a weeknight meal. I took a few shortcuts and came up with a comforting, hearty, and ‘approved’ meal in about 30 minutes.
