The 20-Month Aging Process

Preparation: Blend or crush fresh, clean garlic cloves with a precise amount of purified water or solvent in a sterilized glass container.Initial Off-Gassing: Seal the container loosely or burp it during the first few weeks to let trapped fermentation gases escape safely.

Dark Storage: Seal the container tightly and place it inside a dark, temperature-controlled environment (room temperature, away from heat and direct sunlight). Wrapping the jar in a black bag helps block stray light.

The Wait: Leave the container completely undisturbed for the full 20 months to allow the continuous Maillard and enzymatic reactions to safely mellow the compounds.
