Hiiiii, friends! 👋 It’s been a minute! If you missed my stories a few weeks ago, a lot has changed since May. The in-home hospice company I worked for merged with a larger corporate company. When I heard the news, I immediately felt God saying He was closing the door to this season of life. While I miss my patients and coworkers terribly, this change has been such a blessing. I’ve been able to be more present, watch Reid’O play for his All Stars baseball team (and go to the World Series in Baton Rouge! ⚾️), cheer Reagan on while she learns a new sport (volleyball), and take trips with my family. It’s amazing what can happen when we truly listen to God speaking to us. Now I’m just waiting to see what this next season of life will bring! ❤️
Now about this breakfast situation: this avocado toast with poached eggs + arugula was inspired by B and my trip to Prague last week. We went as an early 15 (!!) year anniversary trip, and it couldn’t have been more perfect - and exactly what we needed! 🥰 I loved all of the food there, especially because of the minimal ingredients and whole foods used. It inspired me to get back to eating more nutrient-dense meals (after being on auto pilot while in the more demanding times with my job). 🌱 This toast was def packed with nutrients and totally hit the spot!
• ancient grain GF bread
• a small avocado
• 2 poached eggs
• organic arugula (sooo good with those runny yolks 🤤)
• red pepper flakes, pepper, and salt
