Tofu Rice Bowl

- Rice
- Black Beans
- Bell peppers
- Onion
- Super firm tofu (pressed and squeezed into crumbles)
- Mushrooms
- Cilantro
- Chicken sausage
- Lime juice
- Seasonings: adobo seasoning, garlic powder, smoked paprika, salt, pepper, turmeric, chili powder
- Cauliflower rice
- Optional: splash bone broth for flavor and extra protein

1. Chop mushrooms and onions and add them both, along with frozen cauliflower rice, to a pan on medium-low heat without any oil (you’ll “sweat” the mushrooms, using the water you draw out from the mushrooms to cook without anything sticking to the pan.
2. Chop peppers and add oil and all seasonings (except cilantro and lime juice)
3. Press tofu as much as possible to remove liquid. Crumble in your hands until it resembles the texture of ground meat. Add to the mixture with diced precooked chicken sausage.
4. Once everything is at desired consistency, add all the remaining ingredients: pre-cooked rice, rinsed and drained beans, cilantro, and lime juice. Flavor to taste!

Hack, I’ll precook rice and freeze in individual servings so that I always have precooked rice available. I usually just defrost in the fridge overnight or microwave for 1-2 minutes. This is a great way to use leftover takeout rice, you can always save it for another meal!

Modified High Protein Broccoli Cheddar Casserole + Apple Slices

This is a perfect recipe for meal prep, since this makes so many serving in one go. You can make your packed meals for the week or try to freeze 1-2 servings to use in the future when you’re looking for a quick meal.

Step #1 - cook one lb of ground meat or tempeh and flavor using a sausage seasoning blend

Layer one: Frozen tater tots (1 bag)
Layer 2: Frozen cauliflower rice (1-1.5 bags, depending on size)
Layer 3: Frozen broccoli (1-1.5 bags, depending on size)
Layer 4: Add a layer of your pre-cooked protein
Layer 5: In a separate bowl, whisk together 10 eggs + 2 egg whites + desired seasonings (nutritional yeast, salt, black pepper onion powder, garlic powder, oregano, and tarragon) and pour evenly over the casserole.
Layer 5: Top it all off with 2 cups of shredded low-fat cheddar cheese

Bake on 400 degrees for 1 hour or until there is no extra liquid if you cut into the casserole.

Loaded Fiber Salad Combo

- Romaine
- Heart of palm
- BRAMI lupini beans
- Dried cherries
- Pumpkin seeds
- Slivered almonds
- Chopped Macadamia nuts
- Maple syrup
- Lemon juice
- Red wine vinegar
- Extra virgin olive oil
- Salt
- Pepper
- Cheddar
- Cooked tempeh (recipe below)
- Optional, fresh herbs if you have them (cilantro, basil, dill)

THE best and easiest way to cook tempeh = crumble with hands into small pieces directly into pan. Add splash of water and steam until water evaporates. Then add oil and seasonings (I love a sausage seasoning blend) and crispy it up!

A Hleap Nutrition packed lunch:

Turmeric Cauliflower:

• Cauliflower, 1 head of florets
• Turmeric, 1 tsp
• Pomegranate seeds (or golden raisins) - measure with your heart
• Olive oil, 2 tsp
• Greek yogurt, 1/2 cup
• Drizzle lemon juice (~2 tsp)
• Black pepper, 1/4 tsp
• Garlic powder, 1/2 tsp
• Onion powder, 1/2 tsp
• Salt, 1/2 tsp
• Optional garnish of fresh chopped parsley

Mix everything together, except for pomegranate seeds/raisins, yogurt, and lemon juice. Preheat air fryer and then cook at 300 degrees Fahrenheit for 10 minutes.

Add a dollop of plain greek yogurt to plate, add air fried cauliflower, drizzle 2 tsp lemon juice, and top with pomegranate seeds/raisins +/- garnish with chopped parsley

Herby Turkey Meatballs:

• Lean ground turkey, 1 lb
• Spinach, finely chop about 2 cups
• Herbs of choice, finely chopped (I used what I had available: basil, cilantro, and parsley)
• Chives
• White onion, 1/2 finely chopped
• Seasonings: garlic, salt, pepper, Italian seasoning

Finely chop all spinach and herbs and combine everything together. Shape into balls and cook at 375 degrees F for 15 minutes.
