Otto’s has always been my go-to cassava flour, so I’m extra excited to share that these Strawberry Shortcake Crumble Bars are made with 🤍
They’re soft, jammy, buttery, and perfect for summer—plus they’re both Core and Modified AIP friendly.
Strawberry Shortcake Crumble Bars
Makes 16 bars
For the crust + crumble:
🍓1½ cups Otto’s cassava flour
🍓⅔ cup maple sugar (or coconut sugar)
🍓 ½ cup arrowroot starch
🍓½ tsp sea salt
🍓¾ cup sustainable palm shortening or ghee (Modified AIP)
🍓⅓ cup water
🍓1 tsp vanilla extract
For the filling:
🍓6 cups frozen strawberries
🍓2 tbsp maple syrup
🍓2 tsp lemon zest
🍓3 tbsp lemon juice
🍓1 tbsp arrowroot powder
🍓1 tbsp water
Preheat oven to 375°F and line an 8x8-inch baking dish with parchment paper.
Mix cassava flour, maple sugar, arrowroot, and salt. Add shortening (or ghee) and vanilla and mix with your hands until crumbly. Add water as needed until the dough resembles dry cookie dough. Press ⅔ into the pan and bake for 12 minutes.
Meanwhile, cook strawberries in a pot over medium heat until softened and reduced into a thick sauce, about 15–18 minutes total. Stir in maple syrup, lemon zest, and lemon juice. Mix arrowroot and water into a slurry and stir into the filling.
Pour filling over crust. Crumble remaining dough over the top and bake for 30 minutes until lightly golden. Cool completely before slicing.
Store in the fridge up to 4 days or freeze for longer storage.
