Hasta luego Puerto Vallarta, te amo mucho.

What I love about PV is the relaxed culture, the vibrant artists, the fresh seafood and tropical fruits, and the wild, unpredictable weather in the jungle.

The media did such a disservice to this chill, little town by flashing scenes of buildings and planes being burnt down in a cartel vs government battle. Check out my image of the gorgeous church and go see for yourself. Local business owners were the only ones who suffered from the lack of tourism.

We had a lovely time and experienced a little something for everyone. I can’t wait to return to some of my favorite destinations.

We found Bonito Kitchen & Bar a few years ago and it’s been a staple ever since. Asian fusion with fresh tropical produce in Puerto Vallarta. You can get small plates to share and my favorite point is that they have an actual child’s sized ramen for small eaters like me. They have a few restaurants across PV so try them all and continue to support small businesses.

We’ve been coming to Archie’s Wok since I was a little girl. It was my dad’s favorite place in Puerto Vallarta; he especially loved the hoisin ribs and the lime cheese pie.
Archie passed in 1993, way too early, and since I lost my own father, this has continued to hold a special place in my heart.

The food is amazing, I never walk out with restaurant bloat, an infliction I often struggle with, and the location is charming as hell. I recommend 10/10!!!

This queen is about to dominate the garden. The pomegranate, aka la granada (Spanish for gr***de), will explode with nutrition. Pomegranates are rich in ellagic acid, a potent anti-oxidant that scavenges free radicals in the body and neutralizes them. Think of a sniper fighting pre-cancer cells, so good, very very good!

A quick search on pomegranate compounds and bacteria will bring up its powerful effect at preventing overgrowths of E. coli, Klebsiella pneumoniae, and drug resistant strains. This means it may help you or your antibiotic have a greater success fighting infections.

Most important is the delicious flavor. A fruit that is not too sweet to join a salad, gorgeous as a juice in a mocktail, and subtle enough to top any dish. If you’re not up to the task of peeling, you may find one pre-divided in the market. Bon appetit and please let me know if you love them.😊

I always love my garden best in spring. Especially when the artichokes bloom. I boil these lovelies with lemon and peppercorns and then dip them in aioli. They taste delicious to me and my gut bacteria thrive with the inulin and fiber. How do you like them?
