Ingredients:
2 medium chicken breasts (boneless, skinless)
2 large zucchini (spiralized into noodles)
1 tbsp olive oil (divided)
1 large lemon (juiced and zested)
2 cloves garlic (minced)
1 tsp dried oregano or Italian seasoning
1 cup cherry tomatoes (halved)
Salt and black pepper to taste
Optional: Fresh basil or a sprinkle of parmesan cheese for topping
Instructions:
Marinate: In a bowl, toss the chicken breasts with half the olive oil, half the lemon juice, lemon zest, oregano, salt, and pepper. Let it sit for 5–10 minutes.
Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Cook the chicken for about 6–7 minutes per side, or until the internal temperature reaches 165°F. Remove from heat and let it rest, then slice.
Sauté the Veggies: In the same skillet, add the remaining olive oil and minced garlic. Sauté for 1 minute until fragrant. Toss in the cherry tomatoes and cook for 2 minutes until they start to soften.
Toss the Noodles: Add the zucchini noodles and the remaining lemon juice to the skillet. Cook for just 2–3 minutes until the noodles are warm but still crisp (don't overcook them or they'll get watery!).
Serve: Divide the zucchini noodles and tomatoes between two plates, top with the sliced chicken, and garnish with fresh basil.
