What’s for dinner today?

Crusted salmon with sautéed spinach and sun-dried tomatoes. Here is the low carb & keto friendly dinner recipe for you:

Ingredients:

for 4 servings



4 boneless skinless wild caught salmon fillets

1 tbsp avocado oil

1/2 tbsp keto friendly sweetener

1 tsp sea salt

1 tsp garlic dehydrated

1 tsp lemon zest

1 tsp thyme

½ tsp basil



1 cup pork panko

1 large eggs

2 tbsps. sun dried tomatoes



Sautéed spinach:

1 ½ pounds fresh and washed spinach

2 tablespoons avocado oil

1 clove garlic, peeled

Sea salt and freshly ground pepper to taste



Keto Cauliflower Rice:

16 ounces frozen cauliflower rice

3 tablespoons butter or avocado oil

2 garlic cloves, minced

1.5 teaspoons sea salt

1/2 teaspoon black pepper

3/4 cup heavy cream or coconut cream



Directions:



Salmon:

Preheat the oven to 400˚F. Grease a baking sheet with 1 tablespoon avocado oil. In a medium bowl, mix all spices and pork panko. In a separate medium bowl, beat the egg. Coat the salmon fillets in the egg, then the bread crumb mixture. Lay the salmon on the prepared baking sheet.

Bake for 10–12 minutes, until the salmon is slightly golden. Switch the oven to broil and toast for 1-2 minutes until the breadcrumbs are dark golden brown.



Sautéed spinach:

Heat the oil in a skillet large enough to hold all the spinach. Add the spinach, garlic, salt and pepper. Cook over high heat, stirring rapidly, until the spinach is wilted and most of the moisture has evaporated. Remove the garlic.



Keto Cauliflower Rice:

In a skillet over medium low heat, melt the butter.

Add the minced garlic and sauté 1 to 2 minutes until fragrant.

Add the cauliflower rice, salt, and pepper and stir to combine.

Add the heavy cream or coconut cream and stir to combine.

Stirring continuously, let the mixture cook for 8 to 10 minutes until all liquid is absorbed.



Put the salmon on the plate and serve with saluted spinach, and keto cauliflower rice. Sprinkle with sun dried tomatoes.

Your keto dinner is ready:)

How to make STUFFED BELL PEPPERS? Another low carb recipe for Halloween [gluten free and keto friendly] - what do you think?

Here is the recipe for you:

Stuffed peppers

Ingredients:

1/2 cup cauliflower rice
1 onion, chopped
3 cloves garlic, minced
1 lb. ground beef
1 can crashed tomatoes
1 tsp oregano
1 tsp sea salt
Freshly ground black pepper
6 bell peppers
1 cup mozzarella cheese
Avocado oil for frying

Directions:

Preheat oven to 400°F.

Meanwhile, trim tops of the bell peppers, remove stems and seeds.
In a large pan heat avocado oil and cook onion until soft, then add garlic and cook for about 1 minute more. Add ground beef and break up beef into crumbles. Stir occasionally and cook until no longer pink. Then stir in rice cauliflower, crashed tomatoes, oregano, sea salt, and pepper. Simmer it about 4 minutes or until heated through.
Place peppers cut side-up in a baking dish and divide beef mixture evenly among peppers.
Bake until peppers are tender, about 40 minutes. Top each pepper with mozzarella cheese and bake again until the cheese is melted.

How to make a keto friendly PUMPKIN CAKE? If you’re looking for an easy and quick low carb and keto friendly dessert recipe for Halloween this video is for you! What do you think?

Here is the recipe:

Crust:

1 cup unsalted dry toasted sliced almonds

½ cup sprouted pumpkin seeds

2 tbsp melted coconut oil

1 tbsp keto friendly sweetener

½ tsp cinnamon

¼ tsp sea salt



Filling:

8oz room temperature cream cheese

1 can organic pumpkin puree

¼ cup+ 2 Tbsps. keto friendly sweetener

1 ½ tsp keto friendly pumpkin spice

1 tsp vanilla extract

Pinch sea salt

1tbsp gelatin powder

2 tbsp. boiling water



Directions:

Prep 8-inch round cake pan lined with parchment paper.

To make the crust, put all ingredients in a food processor and pulse until nuts are finely ground. Pour the nuts crust into the pan, spread out evenly, and put into a refrigerator to set while making a filling.

In a medium mixing bowl beat cream cheese until fluffy. Add pumpkin puree, 2 tbsps. of keto sweetener, pumpkin spice, vanilla extract, sea salt and continue beating until smooth and creamy.

In a medium dish combine ¼ cup of keto friendly sweetener and gelatin, then add boiling water and stir until gelatin is completely dissolved. Gradually add it into the cream cheese mixture and combine the ingredients together. Pour the filling over the crust and smooth top with an offset spatula.

Chill for at least 4 hours or overnight and serve with whipped cream if desired.

One thing I want to tell you…. if you are following ketogenic diet for weight loss, you should not eat the bars yet. These bars are very nutritious but also high in calorie. Once you reach your weight loss goal, and you are on "keto maintenance" it's OK to indulge in these bars... in moderation;)

Check out this Keto ICED MOCHA Coffee Recipe! It is low carb (6g) and ONLY 165 Calories! Let me know if you like this video and which keto recipe you'd like me record next:)

Summertime is a perfect time for an iced frappe coffee. Here is the recipe for you:

1 scoop​​​​ Vanilla egg white protein powder
1 tbsp ​​​​​keto sweetener (adjust sweetness to your liking)
1 scoop ​collagen
1 tbsp ​​​​​cacao powder
Pinch ​sea salt
1- 2 cups ​​​​cold / iced organic coffee (or decaf)
ice

You’ll need a tall glass and a spoon long enough to reach the bottom of that glass as well as a blender.

Directions:

Mocha base:

In your blender, combine ice, ½ cup cold coffee, egg white protein, keto sweetener, collagen, cocoa powder, sea salt and blend.

In a tall glass put ice cubes, pour the mocha base and remaining coffee, stir with the long spoon and serve right away!

Optional: add a splash of unsweetened almond (or coconut) milk and top with heavy whipping cream - Yummy ;)

Keto Popsicles Recipe [Keto Ice Cream] - This keto friendly popsicles recipe is great for summer time! It is easy to make, delicious, and very refreshing. Here is the recipe for you:

Serving: 6 ice popsicles - each serving (ice pop mold) hold 2oz of liquid:

Ingredients:

4 oz ​​​chilled heavy whipping cream
5 oz ​​​fresh berries: I used organic strawberries
Lemon juice ​​from half of a lemon (optional) works best with blueberries
3 Tbsps. + 2 Tbsps.​ of keto friendly sweetener, (1 part of sweetener for the strawberry puree, the second part for the cream) - preferable allulose because it keeps the ice cream soft in the freezer
½ tsp​ of vanilla extract

Toppings (optional) - ​unsweetened coconut flakes, keto friendly chocolate chips, keto friendly nuts

Directions:

• To make a strawberry puree: Place the strawberries, 2 tbsps. of keto sweetener and lemon juice (if using) in a tall glass and puree the strawberries until smooth using an immersion blender or use a food processor.
• Have the popsicle molds ready to fill. Spoon about two tablespoons of the puree into the bottom of each popsicle mold. Place the popsicle molds in the freezer to set for about 20 minutes.
• In the meantime, make the cream layer. Pour the chilled heavy whipping cream into a medium bowl. Whip the cream until stiff peaks are just about to form. Beat in vanilla extract and 3 tbsps. keto friendly sweetener until peaks form.
• When the strawberry layer is set, pour the cream mixture on top leaving some space for the third layer of strawberry puree. Return the popsicles to the freezer to firm-up some more, about 15 more minutes.
• Remove the popsicle molds from the freezer, and add the last layer of the puree, filling the molds only to the "fill line" or you can leave some space to add extra layer of coconut flakes and melted keto friendly chocolate chips.
• Insert a stick into each mold, and then put the popsicles back to the freezer to freeze until solid (4 to 6 hours or overnight).
• To remove the popsicles from the molds, run each one under warm water.

Many people believe that we need carbohydrates to exercise. Some people say we absolutely need carbs after workouts, some other people will tell you that you must eat carbs before long workouts (or a marathon), but is this really a must? Please watch this video if you would like to know my opinion.

Our body can store MUCH more energy in fat vs. carbs. You may also be surprised to find out that glycogen levels can remain the same with or without carbs thanks to the process called gluconeogenesis, so do you need to eat carbs before or after workout?
