Baobab is the fruit of the baobab tree (genus Andansonia).
It originates from Africa and has many valuable qualities. Its name comes from Arabic and is derived from the expression "bu hibab". Translated, this means something like "fruit with many seeds".
Baobab is characterized by an extraordinary high content of vitamin C, which clearly exceeds that of citrus fruits such as lemons, oranges and grapefruits.
In addition, it contains minerals, trace elements and an abundance of antioxidants.

Just wanted to share a delicious vegan carrot muffin recipe, created by our nutrition expert Daniela Herzberg.

🍽 Ingredients for approx. 16 - 20 muffins.
The measurement are in grams and milliliters.

- 350 g carrots
- 100 ml olive oil
- 100 ml coconut oil
- 200 ml almond milk
- 45 g walnuts
- 200 g coconut blossom sugar
- 100 g almond flour
- 50 g oat flakes
- 2 tablespoons cinnamon
- 1 teaspoon cardamom
- 1/2 teaspoon ginger
- 1 pinch of salt
- 6 tablespoons chickpea flour
- 150 g spelt flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 45 g black chocolate

1. Finely grate carrots.
2. Coarsely chop nuts and chocolate.
3. Mix olive oil, coconut oil, sugar and almond milk.
4. Stir in spices, salt and chickpea flour to create a bubble-free liquid.
5. Mix flour, baking soda, baking powder, chocolate chips, nuts, almond flour and oatmeal.
6. Add liquid batter to dry batter and mix quickly.
7. Stir in carrots and pour into muffin tins.
8. Bake at 160 degrees celcius for about 30 minutes.
Let the muffins cool off before serving
