Creamy Veggie Soup 🥕🥒🍲
No cream. No oil. Just veggies + beans doing the work 🤍

Blended smooth with cannellini beans for that cozy, velvety texture—without adding dairy or oil.
Family-friendly, freezer-friendly, and perfect for chilly nights.

✨ Naturally creamy
🚫 0g added sugar
🍲 Yield: 6 servings (~1½ cups each)

Ingredients
• 1 large carrot
• 2 zucchini
• 1 garlic clove
• ¼ onion
• ½ cooked yellow bell pepper
• 1 can cannellini beans (15.5 oz), drained & rinsed
• 4 celery stalks
• 1 quart (32 oz) low-sodium chicken broth

Instructions
1️⃣ Peel carrot. Chop all veggies (leave garlic, onion & celery whole).
2️⃣ Add everything to the Instant Pot.
3️⃣ Cook on Soup mode.
4️⃣ Carefully release pressure. Remove celery.
5️⃣ Blend until smooth and creamy.

Per serving (approx):
✨ 145 calories
💪 7g protein
🌾 6g fiber
🍞 24g carbs

When Breakfast Becomes Dinner ✨

Ingredients
• ½ russet potato, thinly sliced
• 2 eggs + 1 egg white
• Leftover veggies (I used ½ grilled bell pepper + ½ baked zucchini)
• 2 Tbsp feta cheese
• Green onions (optional)
• Salt & pepper to taste

Instructions
1️⃣ Heat a pan over medium-high heat. Add sliced potato, cover, and cook for about 10 minutes until tender and lightly golden.

2️⃣ Add veggies, feta, green onions, and eggs. Cover and cook for ~3 minutes.

3️⃣ Flip carefully, cook another 3 minutes, and serve.

✨ Finish with avocado and/or salsa.

Simple, cozy, and a great way to use leftovers 💛

• Carbs: ~28 g
• Fiber: ~4 g
• Protein: ~22–23 g
• Fat (total): ~14 g

Yogurt popsicles

These are a great way to snack on fruit and good source of protein during these hot summer days.

And to make them softer to bite, I mixed them with aquafaba. Super simple:

Yields 4:

INGREDIENTS:
½ cup aquafaba 
¼ teaspoon cream of tartar
¼ cup sugar
½ yogurt
¼ teaspoon vanilla extract
Optional: fresh small pieces of fruit

INSTRUCTIONS:
1. Into a medium bowl, add aquafaba and cream of tartar and beat with a hand mixer. When liquid starts to become foamy, add sugar gradually at high speed until mixture has stiff peaks. 

2. With mixer on, slowly pour the yogurt until fully incorporated, and then stir in vanilla.

3. Pour into popsicle molds, leaving a little space at top for them to expand. Insert sticks and freeze for at least 4 hours or until frozen.

Extra tip: to make them colorful; blend the fruit with the yogurt until smooth 😉

🍓 Super easy hack to keep your strawberries fresh and avoid spillage.

1.Pick out any that look bad from the start.

2. Add a paper towel in the original package, flip and stashed it in the fridge.

This helps absorb some of the excess liquid that would have otherwise contributed to making them spoil quicker.
