My lunch today! Shrimp cocktail, avocado, leftover quinoa, sprouts, pumpkin seeds, radishes, cucumbers, carrots with tzatziki sauce on the side. For dessert- melon and blueberries!
You can change out the shrimp for a different protein. There is a recipe in the diet book (if you are following the Red River anti-inflammatory diet) to make a cucumber sauce (tzatziki sauce) just add the Culina coconut yogurt to it.

Lunch yesterday!! Curry seasoned quinoa with grilled chicken, fresh greens, sauteed veggies (cabbage, green onion, chard, zucchini), tomatoes, fermented onions. Drizzled with balsamic vinegar and olive oil. So good!

Eggplant dip or Baba Ganoush- is it Greek, Indian, what is it? No, baba ganoush is not Greek; it is a Levantine (Middle Eastern) dish originating from Lebanon and Syria. It is a smoky roasted eggplant dip made with tahini, garlic, and lemon, and olive oil.
What do I do with it? Well, it's a great hummus alternative. You can dip things in it. But I also like to build a meal on top of it, as you'll see here! Eggplant dip, then sauteed veggies, then meat and avocado, and finally a sprinkle of fermented kimchi salt, shredded carrot, and lettuce (last night's leftovers). Wala! I have dinner! 😁

Dinner last night! This dinner was a compilation of fresh veggies and fruit, sauteed veggies, and chicken. I just put it all out there and everyone could pick what they wanted. Most of the time that's how it goes. It's nice to have the food served in containers so clean up is easy... Just put a lid on and throw it in the fridge. Sometimes I do the opposite and lay it all out on a cutting board. But making lunch for the next day, before cleaning up, was easy since everything is out. You can just throw the leftovers in a container and it's ready for the next day. It's as easy as cutting up food and cooking protein. No crazy casserole or complicated dishes here. 😁

Dinner tonight!
This is not quite a first 3 week friendly meal if you are new here and following our Red River diet. However, you can replace the tomatoes with something else, make a bison- turkey-chicken-elk-venison burger instead of beef, no egg and use turkey bacon, of course. I am hesitant to put meals that contain what you can't eat on here but everyone is at a different part of their anti-inflammatory diet and this was so pretty! 😍😝
I love egg on my burger! Extra protein is always nice. There's sauerkraut, pickled onions and peppers, heirloom tomatoes and avocado. So good!
I like Grillo's pickles but they aren't fermented. Still great to eat though! ðŸĨ°

This is my favorite bento snack box. It's stainless steel and I've had it forever!! This goes with me everywhere...work, around the house, hiking, camping, in the car! Really easy to clean. It can go in the dishwasher too.
