Oooh la la! It started with these fresh-milled bagels Megan made. Then my nephew asked my Dad to smoke salmon. Of course, he said yes! Spread some Miyoko's Creamery , add capers, and we’ve got a picnic to take to the river beach!
What’s the deal with fresh-milled flour? When you use high-quality, non-GMO grains, you gain ALL of the nutritional components of the grain, without genetic manipulation.
Did you know that when you buy flour from the grocery store, even if it’s organic and non-GMO, that flour has certain nutrients removed from it in order for it to be shelf-stable? It’s true.
Freshly milled flour retains the complete wheat berry—including the bran which is fiber-rich, as well as the nutrient-dense germ, and the starchy endosperm—delivering superior nutrition, better flavor, plus the active enzymes that store-bought processed flours lose.
This is how bread can be nourishing and digestible. The trick is, you must use the flour/eat the bread within a few days to retain the nutrients. This is how FRESH works. You can also freeze it for later.
Anyone out there have a story about eating and tolerating fresh-milled bread?
If anyone lives in the Albany area, hit me up. I’ll connect you with Megan for fresh-milled breads.
