My newest veggie obsession. This is not super hot but has a good kick and only takes a couple of minutes to cook in the air fryer. So yummy!

One of my favorite quick ways to eat out on plan! Taco palenque with a chicken taco, skip the tortilla and use their sala bar that has shredded cabbage, mixed with pico. I add cilantro and fresh salsa. Yum!
