Catherine’s desire to dig deeper into nutrition became a priority, and in August of 2024, she enrolled in both Harvard Medical School’s Executive Education program to study designing sustainable nutrition plans, and in The Health Coach Institute to receive certification to become a dual certified health and life coach. Tonight Billy said he had a hankering for pizza.

We’ve both been making big changes lately and trying to be more intentional about what we eat—not dieting ourselves into misery, just being more mindful and choosy about what earns a place on the plate.

He went back into his office and I thought:

“I have sourdough starter in the fridge… pepperoni… cheese… let’s see what happens.”

So “Stella” (my/Laura’s sourdough starter discard) became pizza night.

Discard on a hot mini pizza stone. Bake. Passata. Pepperoni. Cheese. Back in the oven.

Was it perfect? Nope.

Did it satisfy the craving and create a little moment around the table? Absolutely.

Healthy eating isn’t perfection. Sometimes it’s just making pizza from sourdough discard and not ordering takeout.

🚫 More processed.

The plain, basic corn shells?

✅ Best choice.

This is why people feel overwhelmed trying to eat “healthy.”

Because the packaging is selling you one thing…
and the ingredients are telling a completely different story.

As a chef and wellness coach, I’ve been watching this shift closely — not just from a medical perspective, but from a lifestyle perspective.

Many people lose weight successfully with GLP-1 medications, but then face a new question:

This week in Vienna, something really special happened.

I met my coaching accountability partner, Jana, in person for the very first time. For nearly a year, we’ve met almost every week—coaching one another through certification, business launches, self-doubt, big dreams, and the quiet moments in between. Until now, it had all been through a screen.

Standing together in the same place felt almost unreal. And deeply moving.

This work we do as coaches is about so much more than goals and strategies. It is about presence. Listening. Holding space. Being seen. Showing up for one another—consistently, honestly, and with care—even across borders.

I’m so grateful for this journey, for accountability that turns into friendship, and for the reminder that meaningful connection is possible in so many forms… and sometimes, it even brings you together halfway across the world.

Last night reminded me
that connection doesn’t announce itself.
It slips in quietly
the moment people gather around a meal made with intention.

It’s in the pause before the first bite.
The softening of shoulders.
The way laughter fills a room before the plates are even warm.

For eight years now,
I’ve driven to Fredericksburg on the first Friday of December
to create a dinner that is more than a dinner—
it is a ritual,
a return,
a gathering of people who choose to slow down
and share their lives for an evening.

And every year,
as I plate each dish with care,
I’m reminded that food is not just nourishment—
it is an invitation.

An invitation to connect.
To breathe.
To be present with the people who matter.
To remember that life feels different
when we come back to the table.

This is why I cook.
This is why I coach.
Because the table is where stories live,
where joy resurfaces,
where we find ourselves again
in the simple act of sharing a meal.

It all starts at the table.
Real food.
Real connection.
Real joy.

Yesterday was all about connection — one of the true pillars of a healthy, happy life. 🌿

I spent the day out at my Tuesday/Thursday client’s ranch celebrating a whole month of birthdays with their family and friends. Lunch kicked off with grass-fed beef sliders and a colorful veggie tray, followed by build-your-own pizzas (20 dough balls — all used!), a quinoa-vegetable salad with orange-lime vinaigrette, mac-n-cheese, and an incredible spread of smoked meats — ribs, brisket, and pork butt straight from the pellet grill.

The last pizzas out of the oven were a gooey triple-cheese and a cinnamon-brown sugar dessert pizza… plus a grilled pizookie that might just steal the show. 🍕🔥

It was a long, hot day — but as guests headed out, each one stopped to say how delicious everything was and many asked for my pizza dough recipe. Moments like that remind me why I love what I do: bringing people together over real food, fresh air, and good company.

Today? Resting, rehydrating, and savoring this perfect 72-degree morning on the patio. ☀️

Real food. Real connection. Real joy.

Billy at lunch today: “Don’t try to vegetize my lunch!” 😆
Me: Too late.

I made a ground turkey whole wheat pasta with wilted spinach — and then, naturally, added more spinach and tomatoes to mine. Because I just love vegetables. Like… look at this bowl of happiness I’m about to mix with quinoa for tomorrow’s ranch job.

Bright, crunchy, colorful, and totally unapologetic about its veggie dominance. 🥕🌽🥒🍅

The little things that make healthy living easier 🍋🍊

What we keep within reach often becomes what we reach for.
That’s why I love keeping simple, real options out in the open — a bowl of fresh lemons for morning lemon water, and easy grab-and-go snacks like clementines.

Lemons remind me to start my day with hydration and intention.
Clementines remind me that snacking can be bright, natural, and full of life.

Tip: Stock your counter with colorful produce you want to eat, and keep a small cutting board and knife nearby. You’ll be amazed at how those small visual cues can change your habits.

Because healthy choices don’t just happen — we design for them.

Day 2: Real Food Reset — Nourished, Not Rushed 🍋🥣🥪🍲

Thursdays are my longest workdays, balancing both coaching and chef clients — meal prep, snack service, and dinner. Yesterday I made a conscious decision to fuel intentionally, not just push through.

I started with warm lemon water, followed by an antioxidant- and vitamin-packed Greek yogurt bowl.
At lunch, I actually sat down (small victory!) to enjoy a Dave’s whole grain sandwich with hummus, spinach, tomato, an egg, and a clementine.

Midday, I paused for a quick break — a hard-boiled egg and a slice of sharp cheddar — and later turned to comfort in a bowl: lentil and veggie soup made with leftover wild rice.

Instead of my usual glass of wine, I poured tonic water with fresh lime — simple, crisp, and honestly refreshing. My sleep score thanked me. 🌙
(Alcohol always shows up in my data — and not in a good way!)

Lesson of the day: real reset choices aren’t about perfection… they’re about presence.

Day 2: Real Food Reset Breakfast 🫐🥣
Antioxidant + Omega-3 Power Yogurt Bowl

This morning’s bowl was all about fuel that loves you back — Greek yogurt topped with blueberries, blackberries, banana, pomegranate seeds, walnuts, chia, flax, and h**p.

Each ingredient plays a role:
✨ Greek yogurt – protein + probiotics
✨ Berries + pomegranate – antioxidants for cell repair
✨ Walnuts, flax, chia, h**p – omega-3s for heart + brain health
✨ Banana – natural sweetness + potassium

It came together in minutes before my early coaching call — proof that nourishing yourself doesn’t have to be complicated. You can even prep it the night before and keep it in the fridge for a grab-and-go start.

Because real food isn’t about perfection — it’s about intention. 🍽️
