Ikejime (eek-eh-gee-meh) is a traditional Japanese style of dispatching a fish, which preserves the maximum freshness and taste of seafood. Effectively, the way that a fish is dispatched reduces the amount of stress on the fish.

Ikejime makes a lot of difference in taste of seafood and is most noticeable when the fish is consumed raw (e.g., sushi, ceviche).
