GRILLED CHICKEN WITH QUINOA AND ROASTED VEGGIES
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup quinoa
- 2 cups water
- 1 cup mixed vegetables (such as bell peppers, zucchini, and carrots), diced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried herbs (such as thyme or oregano)
- Lemon wedges for serving
Instructions:
1. Preheat your grill to medium-high heat.
2. Rinse the quinoa under cold water and drain.
3. In a saucepan, bring the water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for about 15 minutes or until the water is absorbed and the quinoa is tender. Remove from heat and let it sit for 5 minutes.
4. Meanwhile, in a bowl, toss the diced vegetables with olive oil, salt, pepper, and dried herbs until well coated.
5. Place the chicken breasts on the preheated grill and cook for about 6-8 minutes per side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let them rest for a few minutes before slicing.
6. While the chicken is resting, preheat your oven to 400°F (200°C). Spread the seasoned vegetables on a baking sheet and roast for about 15-20 minutes or until they are tender and slightly caramelized.
7. To serve, divide the cooked quinoa among plates. Top with sliced grilled chicken and roasted vegetables. Squeeze fresh lemon juice over the dish for added flavor.
