Cauliflower and Broccoli Gratin With Camembert Cheese
Ingredients
- 50 grams (1/3 cup) breadcrumbs
- 200 grams (2 cups) broccoli
- 30 grams (2 tablespoons) butter
- 50 grams ( - 2 ounces) Camembert cheese cut cubes plus extra to put on top
- 1000g cauliflower (1 medium head)
- 3 tablespoons of flour
- Salt, pepper to taste

Preparation
Preheat oven to 180 degrees C (350 F).Parboil broccoli and cauliflower just until tender, about 10-15 minutes.

Heat up saucepan and melt butter; stir in flour then milk; add cheese and stir until all melted; season with salt and pepper.

Combine sauce with veggies and transfer to a baking dish; top with extra cheese and breadcrumbs.

Bake for 20 minutes or until browned on top.

Cauliflower Rice [Paleo, AIP, Keto]
Ingredients
- 1/2 head cauliflower
- 1 Tablespoon coconut oil
- Salt to taste

Preparation
Cut up the cauliflower into small florets so that theyll fit into a food processor.Process the cauliflower in the food processor until it forms very small rice-like pieces. Squeeze out excess water.

Add 1 Tablespoon (15 ml) of coconut oil into a large pot.

Add in the cauliflower pieces and let it cook on medium heat. Stir regularly to make sure it doesnt burn!Cook until soft but not mushy.

Add salt to taste and serve.

Cauliflower Manchurian
Ingredients
- Cauliflower florets-2cups
- Rice flour-4tbsp
- All purpose flour or Maida flour-4tbsp
- Red chilly powder-2tsp
- Red food color-pinch( if required)
- Onions big diced-1
- Capsicum/ Bell pepper diced-1
- Capsicum/ Bell pepper diced-1
- Ginger and Garlic minced-2tsp
- Green chilly chopped-1
- Chicken broth cube-1
- Soy sauce-1tbsp
- Pepper powder-1tsp
- Salt and Sugar to taste

Preparation
Make a thick batter out of rice flour, maida flour, red chilly powder, food color and salt.

Heat enough oil in a large kadai, dip the cauliflower florets in the prepared batter and deep fry in hot oil till golden brown and crisp.

Heat about 2 tsp of oil in a wok, add the minced ginger and garlic, onions, bell pepper and green chilly.

Stir fry for 2 mins and the fried cauliflower, now season with powdered chicken broth cube, soy sauce, sugar, salt and pepper.

Serve hot.

Broccoli and Creamy Cheese
Ingredients
- 200 grams broccoli and/or cauliflower
- 200 grams broccoli and/or cauliflower
- 1 tablespoon butter
- 1/2 cup cheddar cheese
- 150 milliliters double cream
- 2 tablespoons parmesan cheese
- Freshly ground salt and black pepper

Preparation
Preheat oven at 180 degrees.Steam the broccoli and cauliflower, until just cooked. Once done, arrange in an ovenproof casserole dish.

Heat the butter in a small saucepan, and add the cream. Stir the cream continuously, so that it does not catch. Keep stirring, until the cream starts to thicken.

Add the parmesan to the cream sauce, and continue stirring.Once the sauce has thickened a bit more, pour it over the broccoli.Top with the cheddar cheese and some freshly ground salt and black pepper.

Bake in oven for approximately 15 minutes, until cheese is golden.

Broccoli Beef Stir-Fry
Ingredients
- 1-2 tablespoon Sunflower oil, 1-2
- 1/2 lb. Beef stir-fry strips
- 1/2 lb. broccoli or broccolini
- 1-2 cloves Garlic (chopped)
- 2 tablespoon Oyster Sauce
- a dash White pepper
- 1 tablespoon Shaoxing Wine
- 1 tablespoon Shaoxing Wine
- 1 tablespoon Shaoxing Wine

Preparation
Marinate the beef with 1 tbsp of oyster sauce, white pepper and shaoxing wine for about 30 minutes.

Heat a wok until smoking, pour in the oil then add beef. Stir-fry for 2 mins, then tip onto a plate.

Add broccoli with a splash of water then cook until broccoli turns bright green.

Add the garlic and cook for 1 min more.

Pour in the rest of the oyster sauce and 125ml water. Bring to the boil and cook until reduced to a sticky sauce. Stir in the beef, along with any juices from the plate, then serve straight away.

Broccoli-Cheddar Soup
Ingredients
- 6 cups Sml Fresh Broccoli Flowerets
- 1/2 cup diced cheddar cheese
- 2 cans Low-Sodium Chicken Broth *
- Garlic Clove, minced
- teaspoon Ground Red Pepper
- 1 cup Plain Low-Fat Yogurt
- 1 teaspoon Margarine
- 1 cup Chopped Onion
- teaspoon Dried Whole Oregano
- teaspoon Black Pepper
- teaspoon salt
- teaspoon Dried Whole Thyme
- cup water
- 3 quarts Water

Preparation
* 10-1/2 Oz each** Reduced-Fat, shredded and divided Bring 3 quarts water to boil in a Dutch oven; add broccoli and cook 7 mins or until tender.

Drain; set aside. Coat a large saucepan with cooking spray.

Add margarine and place over medium heat until melted.

Add onion and garlic; saute 5 mins or until tender. Position knife blade in food processor bowl; add broccoli and onion mixture. Process until smooth, scraping sides of processor bowl occasionally; set aside.

Combine yogurt and flour in a large saucepan, stirring with a wire whisk.

Add broth and next 6 ingredients; stir well.Cook over medium heat for 20 mins or until thickened and bubbly, stirring constantly.

Add broccoli mixture; stir well.

Add 3/4 cup cheese, stirring until melted. Ladle soup into bowls; top with remaining cheese.Yields 6cups.

Broccoli Cheese Soup
Ingredients
- 1 tablespoon butter
- 1 onion, chopped
- 1/4 cup butter
- 1/4 cup flour
- 2 cups whole milk
- 2 cups chicken broth
- 1/2 pound fresh broccoli, cut into florets
- 1 cup carrots, (about 3 large carrots) chopped
- salt and pepper, to taste
- 1/4 teaspoon nutmeg
- 8 ounces grated cheddar cheese

Preparation
In a small pan, saute the onion in butter. Set aside.

Next you need to prepare the roux; cook butter and flour using a whisk over medium heat for 3 minutes. Stir constantly.

Slowly add in the milk and continue to whisk.

Add the chicken stock whisking all the time. Simmer for 20 minutes.

Add the broccoli, carrots and sauted onions.

Cook over low heat until the veggies are tender, about 20 minutes.

Add salt and pepper.

Pour in batches into blender, or a food processor, and puree.

Return to pot over low heat and add the grated cheese; stir until well blended.

Stir in the nutmeg and serve.

Broccoli Soup
Ingredients
- 1 head of broccoli (approx. 1lb)
- 4 cups of chicken broth/vegetable broth
- 2 tablespoons of coconut cream
- Salt
- Parsley, to garnish

Preparation
Cut the broccoli stalks as thin as you can.

Cut florets and set aside.Bring the broth to a boil and add the sliced stalks. Cook for 10 minutes.

Add the florets to the broth and cook for another 10-15 minutes, or until the broccoli is soft.

Remove from heat and use a hand/immersion blender to blend until smooth. If you don't have an immersion blender, let the soup cool a little, then pour the soup into a blender or food processor to blend.

Drizzle the coconut cream over the soup, season with salt, and garnish with parsley.

Serve warm.

Spinach Mushroom Omelette with Parmesan
Ingredients
- 1 c mushrooms, chopped
- 1 c mushrooms, chopped
- 2 c baby spinach
- 1 (2 Tbsp) shallot, chopped
- 1/4 c Parmesan cheese
- 3 large eggs, whisked
- 1/2 Tbsp extra-virgin olive oil
- 1/2 Tbsp butter
- salt and pepper (about 1/4 tsp each)

Preparation
Clean and chop mushrooms, wash and dry spinach, and chop shallot

Add butter and olive oil to a non-stick pan over medium-high heat and sauté the shallots for about 60 seconds until translucent

Add mushrooms and cook for 3 minutes, stirring occasionally

Add spinach and Parmesan, season with salt and pepper, and wait until the spinach does its thing

Remove everything from pan and set aside

Wipe pan with a paper towel

Then, using the clean pan, heat butter and olive oil over medium heat

Pour in whisked eggs, making sure the bottom of the pan is evenly covered

Be patient. After about 30 seconds, loosen the edges

Add filing and cook for another 2 minutes

Fold (good luck ) and slide onto a plate

Grate some additional Parmesan cheese on top and serve
