Strawberry Pretzel Pie

Ingredients

• 120 grams (about 4 servings per the package) pretzels
• 4 TB butter
• 1 (0.3 oz) box sugar free strawberry gelatin
• 1 lb. fresh strawberries
• 1 (8oz) block reduced fat cream cheese
• ½ cup zero calorie powdered sugar substitute
• 2/3 cup (or a 5.3 oz individual container) vanilla Greek yogurt
• 1 (8 oz) tub reduced fat cool whip

Instructions

1. Make the crust. Place pretzels in a zipper top plastic bag and crush with a rolling pin until they resemble coarse sand. Melt the butter in a microwave-safe container and add the melted butter to the bag. Seal the bag and mix the contents with your hands until all the pretzel pieces are coated. Dump the bag into a 13 x 9 pan and spread it out to evenly cover the bottom. The crust will remain loose and will not form a solid layer.

2. Prepare the strawberry layer: Bring one cup of water to a boil. Add the boiling water and the sugar free gelatin to a small bowl and mix until the gelatin is dissolved. Set aside to cool. Wash the berries and cut off the green tops. Thinly slice the berries and add to the gelatin mixture. Set aside until ready to use.

3. Prepare the filling: Beat the cream cheese with a hand mixer until smooth. Add in powdered sugar substitute and Greek yogurt. Beat again until everything is combined and smooth. Then, use a rubber spatula to gently fold in the cool whip.

4. Assemble the dessert: use the rubber spatula to evenly space dollops of the filling across the pretzel crust. Then, gently spread the dollops together to make an even layer without disturbing the crust. Pour the strawberry mixture over the filling and use a clean spoon to spread the berries evenly across the surface. Chill until ready to serve.

Nutrition information per 1/12th recipe: 185 calories, 11g fat, 7g sat fat, 19g carb, 1g fiber, 0g added sugar, 4g protein
