Milling my own hard white and hard red wheat berries today.

Freshly milled flour sourdough bread recipe PART ONE

450 grams of freshly milled flour of your choice I like hard white mixed with hard red.
375 grams of filtered room temp water
47 grams of starter
30 grams of avocado or olive oil
50 grams of maple syrup or honey
5 grams of salt
2 teaspoons of potato or corn starch
1 tablespoon of lemon juice

Mix the night before and let rest all night while sleeping. Wake up and shape in an 8x4 loaf pan, let double in size.

Bake 375 for 40 minutes
