INGREDIENTS

โ–ช๏ธParchment paper
โ–ช๏ธ2 lean, all-natural pre-cooked chicken or turkey sausages, sliced
โ–ช๏ธ3 cups chopped fresh kale
โ–ช๏ธ1 medium onion, chopped
โ–ช๏ธ1 medium red bell pepper, chopped
โ–ช๏ธ1 cup ยฝ-inch cubed sweet potato (approx. 1 small)
โ–ช๏ธ1 Tbsp. olive oil
โ–ช๏ธ1 Tbsp. sea salt
โ–ช๏ธ2 Tbsp. thinly sliced green onion

INSTRUCTIONS

1. Preheat the oven to 400ยฐ F.

2. Line a large baking sheet with parchment paper; set aside.

3. Place sausage, kale, onion, bell pepper, and sweet potato in a large mixing bowl; drizzle with oil and season with salt and pepper (if desired). Toss gently to evenly distribute oil.

4. Arrange sausage mixture on baking sheet in a single layer. Bake for 18 to 20 minutes,
stirring after 10 minutes, until sweet potatoes are soft.

5. Garnish with green onion; serve immediately.
