Happy Registered Dietitian Day to all of the amazing to all of the amazing dietitians out there! I know you all are working hard to improve the lives of people across the country - from clinical settings, to food service, to research and development. Never forget that your contributions to health and food are Vital AF!

This is my first time celebrating as an RD myself, and today I’m reminded of all the of the amazing dietitians I’ve encounter along my journey. My professors, preceptors, and peer mentors have all been amazing teachers and role models and I am so grateful to them for shaping me into the dietitian I am now! Here’s to many more years of positively impacting the lives of those in our communities and across the world 🌎

Great use for extra bell peppers and leftover rotisserie chicken 🫑

Cut up bell pepper with cream cheese and topped with rotisserie chicken, air fry until hot. Tasty, nutritious, and a perfect appetizer or tv binge watching snack 😋

After having almost a month to settle in Florida, I have some food pics to share of our adventure so far! 🍽️

What’s next for me? ➡️
I start my dietetic internship this coming Monday! Looking forward to creating a routine and getting to know everyone on this last leg of the RD2B journey!

Speaking of routine, I’m putting it out in the universe that this next year of my life will be the one where I take back my mental and physical health 💪🏼 so here is to adding back daily physical activity to my routine and helping myself feel and look healthier!

I can’t wait to share more with you soon as I get closer to Rachel Johnson, RD!

On 6.17.23 I married my best friend, and although we aren’t taking an official “honeymoon”, we’re enjoying visiting new spots in the DSM area before we move to Tampa in TWO WEEKS!

Last night we finally ate at Destination Grille in Grimes. I enjoyed the Cajun Alfredo with chicken and some bruschetta with Boursin and goat cheese. Great atmosphere and good food! 🍅

We then visited and tried the Doughtnuts, Good News, and the Marion! I love how unique their menu is and how well different flavors work together in their cocktails! 🍹

10/10 night. Cheers to marriage!

After 5 years at Iowa State, I can proudly say that I’m an alumna! 👩🏼‍🎓

Last night, I graduated with my Master’s of Science in Diet and Exercise, and I couldn’t have done it without the support of my family, friends, and amazing classmates ❤️💛 I’m also so excited to announce that I will be starting my dietetic internship at the James A Haley VA Hospital in Tampa, FL this August! I can’t wait to take the next step to becoming an RD and start this new chapter in the sunshine state ☀️

Spring break photo dump! 🍹

Had a relaxing (and short) final spring break! Kicked it off by visiting the Des Moines Botanical Garden with friends and then had a long weekend away to Chicago with Andrew where we enjoyed pizza, drinks, museums, and a the green river! 🍕 and I have to say the UNO’s (not pictured) definitely had the best deep dish, although we didn’t make it Lou Malnati’s 😅

One of the highlights of my trip was visiting the Starbucks reserve roastery, where we got to try a cold brew malt, a fresh brioche, and some barrel aged cold brew! ☕️

Now time to kick the rest of grad school’s butt and find out where we’re moving for my DI!

Hey there! It’s been a while! 😁

Enjoy some photos of delicious foods I’ve eaten (including some homemade faves like potato soup and Boston cream pie)! I’ve been busy the last few months completing my master’s (and bachelor’s) at ISU, and with only 2.5 months to go of my last semester, I’m hoping to share more of my knowledge and passion for nutrition! Here’s what I’ve been up to:

- Applying to DICAS! I applied to 6 internships and as of now I’ve gotten interviews with 4 of them! So looking forward to match day on April 2 🤞🏼

- Writing my creative component paper on nonalcoholic fatty liver disease! Because my actual major is Diet and Exercise, this review paper focuses on NAFLD and lifestyle interventions for the disease.

- Working as the Health ProMotion Intern for the City of Ames! I started this job in October and have had a very fun and educational experience planning and executing some employee wellness interventions + creating educational materials on a wealth of health topics 🍎🏃🏼‍♀️

- Lastly, planning a wedding! Andrew and I will get married in June, so there are lots of details I’ve been working out in addition to school, work, and just living my life. Only 3.5 months to go!

Thank you to everyone who has stuck around and welcome to all those who have recently followed me! I hope you’ll all stay as I transition from a college student to an intern over the next year on my journey to becoming a dietitian! ✨
