Now I’m 6 weeks postpartum and finally back on my green smoothie grind.
I’ve actually been having tons of fruit and smoothies lately because they’re just so easy with a newborn. Like… it’s a whole different vibe throwing things in a blender vs trying to stand there and make pancakes right now 😅
And honestly, I’m really trying to prioritize my health in the highest way possible. The sleep deprivation is real lol… so I’m doing whatever I can to keep my energy up naturally.
This green smoothie is basically like a green juice, but way easier. It’s one of my most popular recipes for a reason. You get all the freshness and nutrients without dragging out the juicer or dealing with the cleanup.
It’s loaded with celery, cucumber, spinach, apples, and I like to throw in some frozen fruit to make it extra creamy. You can totally mix and match based on what you have.
Low fat, super high in antioxidants, tons of fiber… all the good stuff that actually helps you feel good and start your day strong.

Attention all hummus lovers… do yourself a favor and make some hummus on toast.
I made my famous oil free hummus and slathered that on this whole meal bread I got at the farmers market - added some leftover roasted chickpeas and threw them on top with fresh parsley and it turned into one of those random meals that I ate on repeat for a week.

And here’s the thing about hummus… it can be insanely healthy when you make it right. You don’t need a bunch of oil to make it creamy. Just chickpeas, lemon, garlic, tahini if you want it. The key is to blend it with a little juice from the chickpeas, it makes it super fluffy 🤤 and smooth.

You’re getting fiber that actually keeps you full, plant-based protein, and a ton of nutrients like iron, folate, and magnesium. It’s one of those foods that feels indulgent but is actually doing something for you.
Perfect for a quick meal, snack, or honestly just standing at the counter eating it straight off the toast.

If you haven’t tried this tofu recipe yet you’re missing out! This is one of those meals that takes the simplest ingredients and makes them taste like full-on restaurant quality. Crispy garlic tofu, sticky and savory with a little sweetness, over fluffy rice with something green… it just hits.
It’s been on repeat over here because it’s quick, satisfying, and doesn’t require a bunch of effort or random ingredients.
Also fair warning… the tofu alone will disappear straight out of the pan before it even makes it to the bowl.

I’ve been putting this sauce on everything lately!
It’s one of those sauces that makes me want to eat an entire mixing bowl of vegetables, so it’s staying in my fridge forever.

I know when people hear “Alfredo” they’re thinking pasta… but this is way better than that.
It’s creamy, garlicky, a little tangy… and somehow makes the most basic food taste SO good. And it’s made from whole plant foods, packed with veggies, and super low in calorie density.

Ive been loving it on:
Roasted potatoes
Steamed broccoli and carrots
Rice bowls with tofu
Mixed into lentils
Wraps and sandwiches
Or just dipping roasted veggies straight into it off the tray

And it takes like 10 minutes to make!
Honestly this is the kind of thing that makes consistency easy. When your food actually tastes good, you don’t feel like you’re missing anything.
If you want a simple sauce to level up your meals without adding a ton of calories… make this.

Made these blender pancakes this morning and they’ve been hitting the spot lately 🥞

I’ve been trying to be a little more intentional with my protein, especially while breastfeeding. My midwife mentioned how important it is, and honestly… I can feel the difference when I include a bit more. So I’ve been doing this super simple swap that doesn’t change the vibe of the recipe at all.

I’ll replace about 2–3 tbsp of the oats with protein powder and it adds around 10g of protein per serving. You don’t really taste it, the texture stays soft and fluffy, and it keeps me fuller way longer. It’s one of those tiny tweaks that just makes sense.

If you’re breastfeeding, trying to stay satisfied between meals, or even working on building muscle, this is such an easy win. No complicated recipes, no weird ingredients… just upgrading what you’re already making.

One whole month with our baby boy. I can’t even put into words what this has been.
So so much love, wrapped up in sleepless nights and tired days. I’m soaking up every second because I already feel how fast it’s going. I wish I could stop time.
I remember telling Derek when we brought him home… I don’t think people hype up having kids enough. It’s just beyond anything I could have imagined. The absolute best thing ever. Truly indescribable.
Yes, it’s hard. Very hard. But the reward is something you can’t explain until you feel it. Seeing his little smile, watching him fall asleep peacefully after a feed, having him close to me every second… it’s the greatest gift I’ve ever been given.
I still can’t believe I get to spend the rest of my life with him. Just so, so grateful 🩵
And thank you to my friend for capturing these moments so beautifully. Photos I’ll treasure forever. Love you sister 😘

On today’s episode of what can I make that requires almost no effort but still feels like a real meal…
sushi bowls 🤍
this has been one of my go-to lunches lately because it’s so simple but actually satisfying
I’ll make a big batch of rice in the rice cooker, enough for a couple days, and then just build bowls as I go
rice, cucumber, shredded carrot, avocado, sesame seeds, tamari… done
it’s basically your favorite sushi roll thrown into a bowl without all the work, and it just hits every time
I love that it’s minimal ingredients, super fresh, and I can throw it together in a couple minutes once the rice is made

I didn’t realize how much mental energy food was taking up… until I stopped thinking about it.
Lately I’ve just been going back to basics. Same breakfast. Every day. No decisions, no creativity, no “what sounds good?”
Just this oatmeal.
It’s cheap, filling, super healthy, and I can make it half asleep which is honestly the goal right now.
I keep the base exactly the same and just switch up the toppings depending on what I feel like or what’s around.
Today I did coconut + peanut butter and banana because I need a little more healthy fats right now. Other days it’s just berries. Sometimes I load it up, sometimes I keep it simple.
That’s it.
No complicated recipes. No overthinking. No trying to be perfect.
Just something that works… on repeat.
And honestly it’s been kind of freeing.
So if you’re feeling the overwhelmed by food I challenge you to try and eat the same thing for one meal everyday this week. It’s kind of a game changer.

Made these sticky Asian noodles and honestly… they’ve been carrying me lately.
The last few weeks have been a complete whirlwind. Newborn life is no joke. Between cluster feeding, being nap trapped for hours, trying to remember if I’ve eaten, running on broken sleep, and just figuring out this whole new rhythm… it’s been a lot in the best and most exhausting way.
This is one of those recipes that just works in this season. You can throw it together fast, use whatever veggies you have, and it actually tastes like you put in way more effort than you did.
I made a huge batch and have just been grabbing it straight from the fridge and eating it cold at the counter for lunch while holding the baby… and somehow it’s even better the next day. Like the sauce soaks in and gets extra sticky and flavorful.
Simple, comforting, filling… exactly what I need right now.

Living on these crispy PB bars right now and honestly they could not be more perfect for this stage of life.
When you’re deep in the newborn phase and feeding around the clock, you just want something quick, comforting, and satisfying. These hit every time and they’re actually packed with ingredients that support lactation.
Dates give you quick energy and natural sweetness which is huge when you’re depleted and need something fast. Oats are rich in beta-glucan, a type of soluble fiber. Beta-glucan is thought to help increase levels of prolactin, which is the hormone responsible for milk production. Peanut butter adds healthy fats and calories which my body needs right now 😅
I ran out of puffed quinoa so I subbed in buckwheat and it worked perfectly. Still got that crispy texture and honestly I might keep doing it this way.

They taste like a candy bar but are made with the simplest, healthiest ingredients and that’s exactly the vibe right now. Comfort food, but make it nourishing.
In this season I’m not avoiding desserts at all. I’m just choosing ones that actually support my body while still feeling like a treat.
